Betty's Slow Cooker Chicken for Recipes

  • In this video, Betty demonstrates how to cook chicken for use in chicken recipes. There are many recipes that can use chicken cooked this way.
    SLOW COOKER CHICKEN FOR USE IN CHICKEN RECIPES
    Ingredients:
    * about 4 pounds chicken tenderloins (I purchase frozen chicken tenderloins and let them thaw in the refrigerator for a day before cooking.)
    Equipment needed:
    * slow cooker, such as a Crock Pot
    * aluminum foil (long variety), sufficient to line the inside of the Crock Pot completely, with some left over
    * tongs, for moving chicken tenderloins
    * table salt, to taste
    Instructions:
    Start by carefully placing a large rectangle of aluminum foil into the pot of a Crock Pot, lining the bottom and sides. Be careful not to puncture the foil as you form it to take on the shape of the pot. Set it aside. Place the chicken tenderloins in a large bowl and season them, according to your taste. Carefully place the salted tenderloins into the molded pot. When all chicken pieces are placed, bring the ends of the foil up around the chicken, and carefully seal the top as tightly as possible, making sure not to tear the foil. Place the lid on the Crock Pot. Plug in the Crock Pot and set the Crock Pot control to 6 hours. At the end of 6 hours, check to see that the chicken is done. If it is, you may use tongs to remove the chicken pieces to a cutting board or leave the chicken in its own juices for a couple of hours on “warm,” and then remove the pieces. Cut the chicken into cubes. Store them in a covered container and refrigerate or freeze them, depending on how long you plan to wait before using them. Cool to approximately room temperature and then use a chef’s knife to cut the chicken into cubes. They are ready to use in any recipe that calls for cooked chicken cubes!

    Here's a little tip I learned about the aluminum foil. Turn the crock upside down and mold the aluminum foil on the outside of it first. It makes it a lot easier when you flip it back over and mold it to the inside.

    I would use the crockpot liners. I use them all the time. I actually made a really simple meal tonight if you like sweet and sour chicken (using the cooked chicken). I buy a bag of peppers and onions from Walmart (or wherever you buy them) I fry them up or saute them and then add the chicken. I stir it up real good and then I put in La Choy sweet and sour sauce and mix well. I eat that over rice.

    Betty I have seen a tip somewhere online that you flip the crockpot (glass part) upside down then mold the foil over it. Then when you take it off the foil is the exact shape you need to easily pop it into the crockpot bowl!

    Nice to see you again, and welcome back! Question: If the chicken cooks in a sealed crockpot without any foil, won't it still be cooking in its own juices and come out moist? Your crockpot is rather large so maybe the juice would be too shallow, in which case would a smaller crockpot work if no foil is added?

    Thanks!! I like to make quick meals and prepping like this sure helps me. I can add the chicken to so many different recipes. My favorite is a quick pasta alfredo with chicken. I add a salad and Im done in under 15 min!!

    Happy for your return! Our family is sending love to yours. This is a good way to start off shredded or cubed chicken. Can I ask why you held off on seasonings?

      I don’t know what Betty would say, but I imagine it’s so that you can use the chicken in any recipe and season it according to the particular recipe you’re fixing.

    Looks like a great way too cook chicken! I’m going to try this!! The other day I realized I had too many frozen chickens, so I took one out and baked it frozen! Lol Covered at 300, for about 3 1/2 hrs, and it just fell of the bones. So juicy too. I used the dark meat for chicken and rice, and then froze the white meat, which I used a few days later for chicken Alfredo.:) Great to see your beautiful face, Betty! God Bless!! 🙏🏼

    We handle loss with the help of family, friends, and for many of us, faith. My mother died unexpectedly young at only 46. I took me nearly 28 years to come to terms with what happened. I had family and friends then, but my faith wasn't as strong as I wanted or needed it to be so it took me much longer. There's a line in the movie "Fried Green Tomatoes" that goes " A heart can be broken, but it still keep beating just the same." It's true. The parable "time heals all wounds isn't true", but time does soften the sharp edges so that it's not always as unbearably painful. No different than ocean waves polish smooth broken glass along the seashore.

    how would this differ from just cooking the chicken tenders without the tinfoil? chicken tenders usually turn out tender.

    Only one question...my crockpot has high or low....so the 6 hours is on high with 4 lbs of chicken I would assume?? Thoughts?

      I would probably at least start it off on high and then keep an eye on it, and adjust it down to low if needed. :)
