I don't find this to be an accurate judgement or test...each steak is a different cut/type which will turn out differently everytime with the meats texture and how much flavor it holds

With Ramsey's French butter baste with garlic and herbs, everything would be burnt in a pan that temp. Nothing like the taste of burnt butter and garlic on overcooked steak.
