Sushi has come out of nowhere to cement itself as one of the world’s favourite foods. Boasting the desirable combination of being trendy and tasty, it seems that the (sort-of) healthy foodstuff is here to stay. Being the food connoisseurs that we are, we began to think about how we could create the sushi dish to end all sushi dishes; that’s when we thought-up the Sushi Cake.
What You’ll Need:
500g salmon, skinless and boneless
500g sushi rice (cooked and cooled), seasoned with rice wine vinegar
Sesame oil (teaspoon)
Sesame seeds (large pinch)
Nori (4 sheets)
3 large avocados (sliced)
2 cucumbers (peeled and cut lengthways into slices)
Edamame beans, to decorate (optional)
Wasabi, pickled ginger and soy sauce, to serve
How You Make It:
Dice your salmon into small cubes, then dress with sesame oil and seeds, mix and set aside
Now layer your ‘cake’
Place two sheets of nori at the bottom of a 24cm springform cake tin, trimming the edges to fit the round tin
Place in half of your rice, your cucumber and avocado slices and 1/3 of your salmon
Go in with 2 more nori sheets, the rest of the rice, then finally the salmon
Decorate with some avocado and edamame beans (any way you fancy)
Refrigerate for 20 minutes, then you’re good to go!
I showed this to a Japanese person and now they’re promptly throwing up
