- This is a program aired on NHK-WORLD on March 10. Today we've coming to Kyoto where I was born to learn about Shojin-ryori. I learned that is very sustainable and that I can bring the essence of it into my home cooking.

@@orighomisandediare4990 tan and chan are nearly interchangeable with tan being more informal and baby than just young child >_>
@@orighomisandediare4990 Her name is Su, short for Suzuka or Sumire or some other name.
-Tan is a cute suffix used usually with babies, but she's not a baby anymore so now -Chan is used, which is the typical suffix for girls.
If you listen to Moe-san you'll hear that now she calls her Su-chan (even though subs still say Su-tan).

But I tried to follow all of them at the same time. Never even finished the planning phase for one meal...😅
I didn't even think about just going with one rule at first. And learn things one step at a time. I will try again, this time hopefully without perfectionism.😂

I want to follow the "don't waste" rule too, but I sometimes ruin food (mostly when I try out something new) and I'm not good enough yet with cooking to come up with a way to save it or re-use it.🥺 I'll remember trying to put it in a soup, if possible.

Dear Moe, I loved the concept that although shojin-ryori has a lot of rules and seem very formal, you can always use its principles on a day-to-day cooking and still make delicious, healthy and sustainable food. And very good looking indeed. I'm definitely going to make this temari zushi for a couple of vegetarian friends. They're gonna love it. O tsukare-samadeshita!

My okasan is from Okinawa. Watching you with your daughter reminds me of my childhood cooking with her. She passed away in 2020 at 69 years old.
To anyone reading my comment: She should have lived longer but she adopted the standard American diet and became very unhealthy eating a bunch of fast food and junk snack food like chips and donuts. She was overweight, diabetic, high blood pressure, high cholesterol, and went into kidney failure. She was perfectly healthy until we moved to the US and started eating “American” food. I say this to let people know that Japanese people don’t live a long life because they are Japanese. They live a long life due to good nutrition and health habits. Everyone, please take care of yourself.
PS: I’m not saying an American diet is necessarily unhealthy but what we call a standard American diet is which is a lot of processed fattening food.
