Greek Style Beef Stew with Roasted Red Peppers & Mushrooms

  • Serves 4-5:
    1 cup olive oil
    2 pounds boneless beef cubes
    3 onions, chopped, about 1 pound (780 grams)
    6 garlic cloves
    2 tablespoons balsamic vinegar
    14 ounces canned tomatoes, pureed
    1 bay leaf
    2-3 teaspoons dried crushed oregano
    ¼ teaspoon crushed red pepper flakes, optional
    Salt and freshly ground black pepper, to taste
    2 pounds red bell peppers (4 large peppers), seeded and cubed
    10-12 small mushrooms (8 oz./230 grams), sliced
    Preheat the oven to 500 °F, 260 °C.
    Place a baking tray in the oven to heat up.
    Drizzle ½ cup olive oil over beef and season with salt and black pepper. Mix well to combine.
    Place the beef in the heated tray in one even layer and roast in the oven for 15-20 minutes or until brown.
    Combine the chopped onions, garlic, and ¼ cup olive oil in a pot and cook over medium heat about 10-15 minutes or until soft and golden.
    Add browned beef, tomatoes, bay leaf, vinegar, and spices, pour enough water to just cover the meat. Bring to a boil. Cover the pot and simmer over medium low heat, stirring often, for about 45 minutes. Check for doneness. Add more water if needed. Cook about 15-20 more minutes or until sauce reduces and meat is tender.
    Place the sliced mushrooms in a baking pan in one even layer. Drizzle with 2 tablespoons olive oil and season with salt and pepper. Mix well to combine. Roast at 500 °F for 10 minutes or until browned. Transfer the mushrooms to a bowl and set aside.
    Place the cubed red peppers in the same baking tray, drizzle 2 tablespoons olive oil and season with salt and pepper. Mix well to combine and spread them in one even layer in the pan. Roast at 475 °F (250 °C) for about 20 minutes or until softened and slightly charred.
    Stir in the roasted bell peppers along with the roasted mushrooms. Stir and warm through about 2 minutes.
    Serve over mashed potatoes, with toasted bread, or with a rice pilaf.

    Must be quite tasty, especially with the mushrooms. Browning the beef in the oven is brilliant. A lot less clean up afterwards.

    Yes I think browning in the oven is such a great 👍 idea too. Time saver for sure. This looks delicious.. My mother use to make a Greek beef stew similar using the bay leaf, cloves, tomatoes, same method you do, using green beans , potato’s carrots,etc.whatever vegetables.simmering till meat was tender. You may have made this a year ago.

    I have a portable induction burner so i just put that on my center island and brown meat there. All the mess is on my island and an easy clean up. Not on my gas cooktop which is super heavy to clean. Actually i use my induction/ island set up most of time since i can sit while i cook. I have RA and have trouble standing. My hardest cooking job is doing the mise en place. Love you recipes.

    Great idea to roast the bell peppers in the oven, even the mushrooms. I brown the meat in an instant pot using the sauté function on high. The whole dish may be done in the instant pot with some little adjustments.

    I make the same dish . The only difference is I add beef broth , celery and smoked paprika . I also deglaze the pan with red wine because I fry and brown on the stove . My wife is ocd too so she only lets me cook when she is ready to clean the stove . LOL

    I’d personally go with wiping around the stove to deal with splatter than clean a pan that has been in the oven. Thanks for nice recipe for my Southern Hemisphere winter.

      Malcolm Lewis I don’t know.. this pan is pretty easy to clean. The Oil splatter in the stove top goes everywhere. Unless you lay foil over the stove top like I do when I have time :-) this is perfect cold weather food for your side of the world!! Enjoy :-)

      Stove top burner cover is doable. I put the stove top cover all the time so no splatter all over the place.

    I'm making with the pureed tomatoes as I just took your list to the store but now notice in the video you used diced tomatoes. Opps!
    I sampled a little and it still seems to taste great but I will say you aren't joking about the salt and pepper seasonings that are needed.
    Always easier to add salt than remove =)

    You can clean with water but you dry them off right before use. Mushrooms .

    If you're making the stew in a large stainless stewing pot, instead of the medium porcelain pot that you used, it is usually so big and deep that splatter doesn't really make a difference.... To each their own.

    Oh no sweat heart goat takes much longer to cook then lamb, and slightly longer to cook than beef. Goat is a tough meat I am Jamaican so I eat goat a lot, Curry Goat is a major dish in Jamaica. Anyway love your channel and I am now following you on Instagram.

      Really, I cook goat all the time and as long as it's not an old animal, it takes the same amount of time as lamb, but anyhow, even if it does take longer, no problem. The veggies are added in the end, so it will still work. Thanks! :)

      I love red peppers, but I would use a lesser quantity. Your recipe is a good one. I would add a tablespoon or so of French mustard to the sauce. There's something special about that combination which I really love.
