hoping to use this technique to make a giant flan for a wedding! make caramel separately, put in pan, pour in egg mixture and bake - right? any tips? Plan to use a 15" square cake pan
Exactly what I was thinking 🤔, but then I thought well the temperature is low it must be fine. 🤷♀️ But I just don't know, it doesn't feel right!!! 🤷♀️🤷♀️
One thing that was failed to mention in this video is that the standard home plastic wrap melts @ 220°. Cheap home plastic wrap melts around 200°. If using this technique make sure you purchase heavy duty (restaurant grade), plastic food service film!!
If someone already asked apologies. Can you use tinfoil instead of cheap supermarket plastic wrap that melts. I wouldn’t know where to get restaurant grade plastic wrap in my area and I’m dying to make this lol.

Why do the egg yolks not scramble when you add the boiling milk mixture?
Adding them slowly a little at a time keeps them from scrambling!

What happened to the silicon mat when you take the creme brulee out of the oven?
Good catch! We baked the 2nd one without the silicone mat so that's what you're seeing, but both ways work just fine :)
