MASARAP NA PARAAN NG PAGLULUTO NG IGADO | SIMPLEST VERSION OF IGADO COOKED IN 35 MINUTES!

- This recipe is the simplest version of Igado, a popular Ilocano dish from the northern part of the Philippines. Made from pork shoulder strips ( kasim ) and pork liver strips cooked in soy sauce and vinegar mixture with vegetables like green and red bell pepper, carrots and green peas. Other version of igado uses pig's innards such as heart, kidney and intestines.
INGREDIENTS:
For the pork marinade:
- 3/4kg pork shoulder ( kasim ), cut into strips
- 1/4 cup soy sauce, ajust according to your taste
- worcestershire sauce ( optional ), a few drops
- ground black pepper to taste
- 1/2 large size onion, minced
For the pan fried liver:
- 1/2 kg pork liver, cut into strips
- cooking oil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 5 cloves garlic, minced
- 1/2 large size onion, minced
- 2 to 3 pcs dried bay leaves ( dahon ng laurel )
- 2 tbsp vinegar
- 1 large size carrots, cut into batonnets
- 1 small size red bell pepper, cut into strips
- 1 small size green bell pepper, cut into strips
- 1 cup frozen green peas, ( you can use green peas in can )
- water, if needed

I'll be making this tomorrow evening and can't wait to see how great it will turn out after watching this video of yours. The only difference will be that I'll be using beef (although I love pork as well).
The type of cut I purchased contains a lot of fat in between the muscle fibers (7-Bone Chuck Roast). I feel that as long as I allow the meat to simmer enough to tenderize fully, it will turn out just as great. I had the carrots and green peas in mind already but after seeing the red and green bell pepper, I just might add these to the mix. I can see it adding another layer of flavor. Love your video, it was great. Keep this going!
