I made my first quiche ever and I’m a senior….it was delicious and I got many compliments.. I love the idea of making small serving (ish )size . Your dough looks awesome! This will be my next dish to try.. thank you for sharing.

Dennis, I chuckled at your admission of nearly using a 1/2 pound of butter! We all have a few cooking blunders to relate. I was once halving a large batch bread recipe but I inadvertently doubled the salt. It was inedible! Once I got over the disappointment, I had a good laugh.
Thanks Mea. Not "nearly." I really made the dough with all that butter and it was like a batter. I kept adding flour until I realized my mistake and started again. The first batch is in the refrigerator. I'll experiment with it this week. -Dennis
Dennis I must make these because you usually understate how good some things are. So it sounds like you outdid yourself on these quiche. Hope you are not too much of a nutmeg fan because I plan on copying it to a tee.
the tortilla press returns! what a great idea, i should have thought of this. if i ever hosted a party, or went to a party, this would be an ideal item to bring and im sure everyone would freak out. im sure your guests will love them - they are a lucky bunch! i know you dont like spicy food but if there was ever a thing that screamed out for a dash of hot sauce before eating, this is it. man those look amazing. have an excellent thanksgiving my friend!

Butter has fewer calories than oil, 102 per tablespoon compared to 122. That's probably because most USA butter is about 20% water. I never tried oil, but it would probably not work well. Lard would be a better alternative, 115 calories per tablespoon. It's the texture of the fat that is important in the pastry. I hope that helps. -Dennis
