    Nothing brings back memories of the farm garden when I was a kid in the 40s than freshly snapped green beans....
    I'm 85 years old, and not flirting with you, but you get prettier every year

    My mother used to have a pickled recipe for (fresh) green beens called Dilly Beans. Have you ever heard of them? I dont remember the exact recipe but it had garlic and dill in it. I wan`t to tell you I love you and God bless you. I wish everything good for you.

    I canned Blue Lake green beans, tomatoes, kraut, jalapeno relish, and more this year. My first time canning in a couple of years, nothing tastes better than home grown and canned vegetables! I also use pretty much the same process for canning chopped greens, such as kale and mustard. It always makes my day to see a new video from you, very informative! Have a wonderful and Blessed day!

    I'm over in Sweden and unfortunately pressure caning jars are waaaay to expensive here, due to that I have to order them from Amazon and the sellers on Amazon, sure know how to raise the prices... 😱 Anywho, yes, I do can a few jars of beans and green beans but mostly, I dehydrate them. I feel that as long as I'm going to put them in some type of dish/casserole, it really doesn't matter that much, taste wise. This past fall, I had to buy green beans, due to for whatever reason, I didn't even get ONE green bean, only green small tomatoes that wouldn't ripen even when I'd laid them out to ripen due to frost coming... Nope, they all just turned black??! Same with the cucumbers I had planted, didn't get any. Also only got a few zucchini from my 6 plants, which are usually highly prolific. Have no idea what was up this past growing season.
    When it comes to the green beans, I had to resort to buying the frozen packages, since the fresh ones were way to expensive. I dehydrated all of those so... Tomatoes, I opted to buy the cheapest canned diced tomatoes, which were actually cheaper than buying the cheapest fresh tomatoes... Once again ????! Made mostly salsa and various spiced pasta sauces. For the regular canned diced tomatoes, I just left them in the jars which I'd bought them in. They're good for at least a year in those cans so, I opted not to waste jars on those.

    What about water bath canning? We grew up doing dill pickles with water canning. But the amount of green beans I go through has me interested in putting up some this summer. I’ll have to invest in a pressure canner.

    My mother pressure cooked (not canned) tomatoes way back when I was in High School. She was making ketchup or tomato sauce or something else that required cooking. Anyway she shut off the heat and waited . Then took off the weight to depressurize. Nothing came out of the vent hole so she removed the lid. Tomato under pressure get hotter than regular boiling. The vent hole was plugged with food particles so when she removed the lid the entire contents emptied out all over her. about 5 gallons of hurt. Burn ward . Hospital stay. She wont go near a pressure cooker or pressure canner to this day 50 years later. I have made a brass plunger with a bendy part so that it wont drop in . I am in the habit of plunging the vent hole just to be sure. Even if I see steam rising .
    opening a canner too early will cause the jars to puke out the liquid contents into your canner water if it doesnt make the jars break into little pieces. for trivia purposes I have found that putting canning jars in the microwave will eventually cause the jar to break when pressure canned the next time. Why dont know

      I had an aunt who used an unmarked kerosene for cooking. I was little & don't remember much other than an explosion & she had skin falling off her body. She survived. Not sure she ever canned again either!

    • @SurvivalHT
      @SurvivalHT  7 місяців тому +2

      No, they have to be canned under pressure to be safe
