Tasty Kerala Stle Chicken Roast - Chicken Varattiyathu

Ingredients
Chicken - 1 kg
Onion - 4 nos
Green chilli - 3 to 4 nos
Garlic - 8 to 9 nos
Ginger - 1 nos
Red chilli powder - 1 tbsp
Turmeric powder - 1/2 tbsp
Dry red chilli - 3 to 4 nos
Fennel seed - 1 tsp
Cinnamon - 1 nos
Cardamom - 2 to 3 nos
Salt - 1 or 2 tbsp
Oil - 3 to 4 tbsp
Method
Take a pan,add cleaned chicken pieces.
Then add red chilli powder, salt and turmeric powder.
Mix them well and marinate for half an hour.
Heat oil in a pan, add the dry red chillies and saute them well.
Add fennel seed,bay leaves, cinnamon and cardamom.
Saute them well for a few minutes.
Now we have to grind the fried dry red chilli and fennel seed mix into a fine powder and set it aside.
Then we have to crush the ginger and garlic into a fine paste and set it aside.
Heat oil in a pan, add the chopped onion, and sauté them well.
Sprinkle some salt on them and saute them well until they become transulant.
Add chopped green chillies and curry leaves; sauté them well.
Add the crushed red chilli mix and sauté them well.
Add marinated chicken pieces and sauté them well.
Cover and cook them well.
Remove the lid and check whether the chicken is well cooked or not.
Add some curry leaves and sauté them well.
Cook for a few minutes.
Remove from fire and set aside.
Serve the tasty chicken roast with appam or meals.
