I would recommend making it with double the ingredients (6 tbs sugar and 2/8 baking soda) so you get more. When I made it there wasn’t enough for me to use the cookie cutter.

You can turn off the heat and quickly stir. The way how I do it is I stir the sugar. To prevent overheating I remove the pan from the stove but I don’t turn it off. I continue mixing and adding baking soda to it. I put the pan back on the stove when I need more heat.
