    Great Recipe, healthy and tasty. Vegan and Vegetarians never have to give up taste and the best part about eating vegan is it's cheap and you can eat as much as you want and never have to worry about cholesterol and all the nasty hormones in meat and dairy.

    hey Brian .. thank you so much for this recipe presentation. i cannot pinpoint the reason (maybe your calming 3rd grade teacher tone of voice?) .. but your video just cured me of my seitanophobia. soon after becoming a vegan in june 2010 i purchased some powdered seitan by the pound and read tons of recipes online. daunting. scary. time-consuming. after 4 months i tossed the stale untouched stuff.
    now i know i will soon buy it again .. and this time do it! thanks again.

    Sheese is a delicious vegan cheese product made in the UK. You can also find it in stores in the US and I think Canada too.

    Good question:
    It allows moister to be absorbed into the turkey while keeping the turkey moist will cooking, and lets the seitan stretch some.

    hi, I've read everywhere that seitan should be kneaded at least 2-3 minutes, what is the reason you don't actually knead it? thank you for the recipe!!

    @hansshna I have made several and changed some of the spices used, so tweak it a bit to your liking, it will make a difference.

    1 gallon water (to boil loaf)
    Dry Ingredients
    2 cups vital wheat gluten flour
    2 Tbs. granulated onion
    2 Tbs. paprika
    2 Tbs. whole fennel seed (coarsely ground)
    2 Tbs. whole caraway seed (coarsely ground)
    1 Tbs. salt
    1 tsp. ground cloves
    1 tsp. ground black pepper
    Wet Ingredients
    1 cup vegetable broth
    1/2 cup olive oil
    2 Tbs. molasses
    1 Tbs. vinegar

    It will be fine for five days.
    After it is cooled, wrap it tight or place in a tight sealing container.
    You can also slice it and wrap in individual packages and freeze.

    Someone asked about an alternative if you don't have cheesecloth. i have used a lint-free cotton dishtowel. i didn't tie it, just folded it over.

    Haha, that's an imortant question that is not often addressed among us vegetarians. I think what it comes down to is our conditioning as we grew up. I don't know many vegetarians who were raised as such, and omitting meat straight out poses an issue...since we KNOW meat tastes GOOD. It does, disgusting as it may be. But kowing the source definitely ruins the fun.

    Brian: Came out pretty good. Little on the spicy side but quite tasty, Will cold smoke with hickory or lum yai wood

      truly, people are still looking at my 2007 video :/
      (FYI- 20 years of being vegan and I am still alive)
      I believe you can freeze it. Wrap it tight and it should be fine.

      +Brian McCarthy it's a great video :) I myself am not fully vegan yet although I have lived the past 15+ years as a vegetarian. My daughter has gone full vegan though so I've been trying loads of recipes and came across this one and it looks fantastic. I remember corned beef and loved it. Cannot wait to get into town tomorrow to pick up everything I need and give it a try. I am sure it will become a favorite of ours. Thanks for answering 😊

    Is there a way to make seitan noodle, like a kind of macaroni? I'd like to make a carbless, or near-carb-less pasta-type dish :) .

Here is the link to their site showing angel hair noodles www.miraclenoodle.com/p-2-angel-hair-pasta.aspx These are sold in some grocery stores usually in the produce section near the tofu products and such. Some people love them, some hate them.

    That looks great. A Tasty sandwich that even a hardcore meateater would love to sink his teeth into...
    I like the idea of making textured veggie protein with cheese cloth etc....... can you show other Seitan recipes like this?

    For people who are concerned about a healthy heart, is elimination of the oil possible? This recipe looks great but the oil needs to be eliminated,,, will it still work?

      Probably will work without, I too avoid oil and have noticed that there it is very possible in most cases. Baking is the challenge.

      Cristóbal Carnrick Yes, it's possible to leave the oil out. I believe it's in there primarily for moisture. I saw another modification of this recipe that used maple syrup for the sweetener in place of molasses and no oil.

      I've used coconut oil and I've used grapeseed oil, and they both came out excellent,and I substitute once the caraway seeds for cumin, I didn't realize that I was out and everyone, even my meat eating military friends loved it

    great video and good recipe. The only thing is the name corned beef. I think that's kind of negative. Try calling it something else at least veggie corned beef.

      similar to when i made seitan. I think it's the medium we have. You could try kneating it a bit. Should give it a bit more of a bite

      went to culinary school at Clark College in Vancouver WA. I ate meat for the first 30 years of my life then went vegan. I am now 50 and still eat a vegan diet. I can not believe how health I am and YOU should see my wife! WOW. No more cookbooks or videos for me, just a chef at MIT in MA now.

    sheese is not that great IMO try to find cheezly, that stuff melts like real cheese, mozarella/darkcheddar/lightcheddar/feta/etc they have alt of different flavours

    I don't understand... I'm a vegetarian... but I never understood why people who are vegetarian (or vegan) try to get their food to taste like meat :S Can anyone help me out lol?

      Many people ate meat before they became vegan. Some people want to replicate the textures they used to enjoy but now no animal has to suffer or die needlessly.

    We can cheat and come pretty close to the recipe by using the same sizes and type of bowls etc he is using and by looking at the video you can see how full each container is...That is what I am going to do !! It will be pretty darn close !

    Natural or not, I feel best when my diet is mainly composed of cooked animal. I believe that it has become very trendy for people to consider meat as bad and unhealthy, I feel nothing is further from the truth. Meat has a list of health benefits that make just about every other food (except eggs) look pretty weak in comparison. From the high quality absorbable amino acid profile to the very absorbable iron it contains, meat is a great food.

      Vegans don't reject taste. They reject unnecessary suffering and death as a whole. This way you get both taste and compassion for the most vulnerable Among Us.

    If the ideals and beliefs of a vegan is to not eat meat because they don't condone the killing of animals, then why are there so many vergan recipes that try to mimic meat? It's really funny to me. I say stay true to what you believe in, throw out your "Sheese" and stick to eating raw veggies.

      Many people used to eat meat before they became vegan. I personally liked the texture of some meat. (Roast beef, corned beef for Reuben sandwiches, etc...I like recipes that mimic meat so I can have some of the things I used to enjoy but now no animal suffers just so I can have a sandwich or s stir fry.
