    OH MAN. I made this tonight, and hubby and I both really, really enjoyed it. After boiling, I let it cool, then cubed it and sauteed it in a bit of butter, onions, garlic, Montreal lower sodium chicken seasoning, and browned it up a bit -- just to get a bit of a golden colour to it, before deglazing the pan in a bit of sherry. OH YES. We agreed this is the best seitan recipe we've found yet. I I used to enjoy Poulet ala Creme with lots of mushrooms. Can't wait to make that!!! 😋 Yours is the only seitan recipe I've seen yet that is worthy of traditional chicken recipes. It intrigued me for its simplicity; simple is almost always best. Your recipe makes it so versatile for every international cooking style under the sun. Blessings to you and yours! 💖❤️💚💙💜💛💖

      Hi Mary, lol, there's a lot of red food coloring in the packaged seasoning and some people don't like it. I like to make my own marinade--no food coloring and less sugar :)

    Jenjen jen A good replacement for vital wheat gluten can be made by combining 1 tsp Guar Gum with 1 cup flour of your choice (rice, bean, etc.) Good Luck!

      RunAwayRice can you please make a video with these replacements? I'm sure it would be helpful for those who can't eat gluten or wheat but still want to try seitan. Plus I could use the help. I've tried it three times and it only came out right the third time. The first two time it was dry and fluffy like bread! Lol. I don't know where I went wrong the first two times.

    Thank You soooo much for this recipe! I can buy this kind of mock pork in my city's china town but that usually means I need to take a 11/2hr bus trip to get it. It's a little pricy at $10 bag. My non-veg hubby loves it though!

    I tried this recipe the other day of frying it on in a pan, like you did, and it was delicious! I did it without the husks. I have them, but no twine and rubber bands on hand that's why. They have blown up so much when I cooked them, but it was delicious with the pork seasoning like you showed!
    Will make this again sometimes, but the next batch I'm thinking of steaming it wrapped in foil loosely to keep from puffing up like crazy. I'm sure it'll be just as delicious steamed as if it was boiled. ❤❤ this time, if it doesn't get gobbled up, I'll save it for rice and vegetable dishes. ❤❤

      Red food coloring is neither vegetarian/vegan because it is CARMINE aka crushed cochineal insects. Mayba just use barbecue sauce instead or something else.

      Joey Ferracamma TBH I dont think China would bother getting their pigmant from vegan sources. If youre fine with crushed red insects which are both unethical and gross then up to you.

      You do realize that local producers of pigmentation do exist and not everything that exists in the world comes from China, right? My question to you was if mineral pigmentation would do the job, not about what you think about red pigment from China.
      I'm very aware of ethics, I've been vegan for over 3 years myself so there's no need to make implications or assumptions. You're vegan. Your job is to be resourceful when people are asking genuine questions about making positive changes for themselves and for the animals instead of being condescending and giving no cruelty-free alternative. I've reached a lot more people (regarding veganism) with kindness and resources than I did when I was condescending and unresourceful.

      Kristen T Xantham and Guar Gum are ingredients that yield similar results but you'll need to mix this with a flour (rice, bean, etc) base. Use 1 teaspoon of Guar gum per cup of flour when using it as a replacement for vital wheat gluten. Hope that helps!

      Yes, seitan freezes really well. Seal it well so the seitan doesn't get freezer burn.

    Could you elaborate on what "roast pork seasoning" is? Like, how would one make this at home?

      The roast pork seasoning also called Chinese BBQ seasoning is sold in stores in little packets. It's vegetarian and is made of sugar, red food coloring, powdered soy sauce, garlic and onion powder.       LV yeah you could try using some paprika or even boil some beets and then boil down the water to thicken and use as a dye. It would add that sweet element and counteract oversaltiness you might have 👌

    That looks so so yummy, however I can’t find the vita wheat gluten in my country. If we make the dough from wheat flour and put the flavour, would u think the texture will be the same? I sometimes do it at home, it rather becomes spongy, not meaty texture like yours. Thanks so much

      Hi Hailey, there are recipes on the web which show you how to make vital wheat gluten from wheat flour. It's worth a try if you can't find this product where you live. To get a meaty texture, you need to cook the liquid out of seitan. You can also squeeze the seitan after boiling to remove the excess water. Hope that helps! Good Luck!

      Hi em Daisy, vital wheat gluten is just the protein component of wheat flour. It's what makes dough sticky and elastic. It's all-natural and doesn't contain any artificial ingredients. Vital Wheat Gluten (Mì căn) has been used for centuries as a meat substitute and is very healthy. Definitely do more research and decide for yourself. I've shared a few recipes using Vital Wheat Gluten if you decide you do like it.

    I️ followed your directions exactly (the directions without the corn husk) and my Seitan came out spongy with a lot holes :(

      Hi Marlena, having small holes is common. Squeezing the dough into a ball helps to compact the dough and remove any air pockets. If the seitan is spongy after boiling, squeeze on it gently to remove the extra water. Hope that helps for next time.

    It was good however quite soft, maybe add less water next time for meat chewy texture

      Hi Kim, you can add less water for a denser texture. One other thing to try if you like seitan is to marinate the raw seitan with the seasoning and than pan cook with just a little bit of water. The texture will be firmer because we don't boil it. Thanks for sharing your results :)

    Thankyou for sharing , Is there a way of making this which is gluten free ? It would also need to be nut free , sorry for being so difficult hahaha , but it is hard to find different recipes and keep things interesting when you have food allergies as well as being vegetarian .

      +Shania Twain If you want the texture to be less soft, omit the baking powder and boil gently so it doesn't get bloated with water.

      Hi sorry em, this recipe doesn't use bread flour. You can use the bread flour to make bánh bao or dầu cháo quảy :)

    I tried this recipe and it unfortunately was kinda rubbery with a weird floury taste. Do you know what I can do to make it better next time? :)

      The seitan should be chewy but not rubbery. I am not sure about the flour taste--just make sure it's thoroughly cooked. You can try omitting the baking powder, this will make the seitan denser. Also, try not to over-boil it. Good Luck next time.

      Hi Sophie, it's seasoning for making roast pork. It doesn't have pork in it and is vegetarian. The ingredients are typically: sugar, soy sauce powder, spices and red food coloring.

      Hi, all-purpose flour will not work in this recipe as it doesn't have the needed glutens. Where do you live? If in US, I can share some store names or links to purchase online.

      Lee Darin Jr Hi Lee, you can try seasoning the seitan with mushroom seasoning or a vegetarian stir-fry sauce. It add a bit more flavor to the seitan. Good Luck!

    Hello I love your recipe however when I followed it and tried to make the first variation with out the corn husks it came out very spongy like. What did I do wrong? We could not eat it cause it was too bouncy?
    I really want to try again and see if I can get it more meat textured what should I do?

      Hi Abby, often boiling it too vigorously can result in an overly spongy texture. If this is the case, after boiling the seitan, remove the excess water by blotting the seitan or rolling it in a kitchen towel. The more water you remove, the firmer the texture will be. Give it another try and let me know how this turns out for you!

      +Nahla Parker Seitan is a chewy because of the vital wheat gluten. My seitan is chewy too. If you are looking for a less chewy texture, you'll need to mix in other ingredients--a different recipe.
