That kubdari or the lobiani looks like a great lunch. Dumplings for starters and either chashushuli or shkemruli main at dinner time. They would probably be my pick, but it all looks worth a try. I admit to knowing almost nothing about Georgia, and its not somewhere I would think of for great food. That might just be highlighting my ignorance. Thanks for showcasing somewhere some (many?) of us wouldn't have thought of.
Boy I miss Georgian cuisine so much here in London. My favorite combo is a vegetarian one - lobio + chvishtari. Especially the chvishtari they make in a place called Sakhli 11, just next to the liberty square. They serve it there with 3 types of adjika - the classic read one, the green one and the minty one. All are to die for.

Also, there are different types khachapuri from different regions of Georgia, including Megrelian/Mingrelian khachapuri, and they are all equally tasty. Sincerely, Alex

Personally I and my friends didn’t like chvishtari after first try and unfortunately we stumbled on same dish (I think) under different name mchadi. ↘Churchkhela is not only sweetness. In ancient times, Churchkhela was like an MRE (Meal, Ready-to-Eat) for Georgians. If it is prepared correctly, it can be used as a MRE (sweet).
Of course, you don't have to re-cook it or anything. Took it out of the bag and ate it right away. The composition is very high in calories. These are: Grape juice, Wheat flour and Walnut.

Actually khachapuri stand for lots of different types of flattened mostly stuffed bread and not just for the most "boat-like" one Adjara khachapuri you had (foreigners basically only know this dish).
. ❗Warning!!!❗ Khachapuri and Khinkali must be eaten hot, freshly prepared. Otherwise, if the food cools down or is reheated, 60% of the original taste is lost. Khinkali can be re-fried (not boiled, but fried) and it will be delicious. Yes, it will be delicious, but it will taste completely different. ↘ I would like to draw your attention to one more thing: There is no need to drink Khinkali soup first and then eat it. Eat them together rather than separately and you will feel more flavor nuances.
@@TheJoeyP you shuld cut the edges of the bread and dip it in the middle part of the cheese and egg. after you got left only the circle you just cut it with fork and blade and eat the rest.
