The head is a bit tricky to figure out, but you can actually get him to look a little up and down, and decently turn his head left and right in addition to the tilt! What you want to do is basically push the head in the opposite direction of where you want it, then turn the head itself on the ball it's attached to to get him to look the right way. Really hard to explain without showing visually, but it's there!
