Cawl - made with gammon.

    People tend to use beef, lamb, gammon/ham or even bacon as their base in cawl. Which is basically just a clear soup with vegetables boiled until softened. Using gammon or ham hock is a cheaper alternative, as my family commonly made it with it. Served with cheese and bread on the side.
    For the ingredients, you basically just want a large handful, of each type of vegetable, diced.
    Serves 6 - small bowls
    1 x small gammon joint
    1x large parsnip
    1/2 x a small swede
    2 x large carrots
    2 x large potatoes
    1 x medium leek
    1 x onion
    4 x large garlic cloves
    Table salt
    White pepper
    1. Preheat the hob to a high heat.
    2. Dice the gammon joint into large cubes. Place into a large saucepan of cold water. Bring to a boil.
    3. Dice the parsnip, carrots and leek. Peel and dice the potatoes.
    4. Peel the onion, garlic cloves and swede. Dice.
    5. Take the gammon out of the water and place into a bowl. Skim the scum from the water (white frothy part).
    6. Add all of the chopped vegetables to the same pan of water. Season with salt and pepper. Cook until softened.
    7. Add the gammon chunks back into the pan. Cook for a further 5minutes on a low heat.
    8. Serve the cawl in a bowl. Sided with bread and cheese.
