Irish Dublin Coddle

  • This dish is most similar to a stew. It has delicious Irish banger sausage, Irish rashers, onions and potatoes. This is a Dublin comfort food that most Irish enjoy. There is no one recipe for this dish but rather, every family makes their own version. Here is the version that my wife’s family loves.
    Irish Dublin Coddle
    (Makes 4-6 servings)
    Ingredients
    3 lb potatoes waxy like Yukon Gold are best
    2 lb pork sausages Irish bangers are the best but any good pork sausage can be used
    1 lb thick-cut Irish rashers or any bacon like Canadian
    2-3 onions
    3 tbsp butter
    2-3 cups beef or chicken stock
    6 tablespoons chopped fresh parsley
    Salt and pepper to taste
    Directions
    Peel the potatoes, slicing them thickly and slice the onions.
    Melt half of the butter in a large dutch oven.
    Cook the onions and bacon until colored. Remove once cooked and set aside.
    Preheat your oven to 300º.
    Grill the sausages until golden. You may cut the sausage into pieces if you wish. Set the sausage aside.
    In your dutch oven, do two layers of your ingredients in this order: onions and bacon, sausages then the potatoes. Season and add parsley to each layer.
    Pour your stock over the top.
    Place your pot on a burner until the liquid comes to a boil. Cover the pot and place it in the oven for 2-3 hours, but check after 2 hours, adding more stock if necessary. Bake until the potatoes are very tender. Remove the lid and broil for 5 minutes to brown the top.
    Serve with Irish brown bread.

    I love an Irish recipe. I’m Italian, so I know nothing about cooking Irish food. I really enjoyed this.

    Good job here. I'm Irish and the trad way is boil everything but, I'm frying them sausages haha.
