When I used to have a sage plant, I loved the fragrant flowers, and I loved to use the leaves on almost everything. So much better than dried, rubbed sage. I love this recipe, and hope to make it someday.
I want to try the butter and sage on my tortellini. I also liked her adjustable cutter. I'll have to search for one. I'm terrible at cutting straight. Thank you Maria for sharing your talent. my husband and I just discussed the chances of getting a five year old today to milk cows or lead them to the fields.

I think the closest cheese to this in the USA would be farmer cheese mixed with ricotta, or ricotta salata, perhaps, if you can get that. If feta cheese could be de-salted by soaking in fresh water, that would be good. Greek stores will have similar cheeses. But if you have a Greek store in your area, then you probably have an Italian store, too.
In Los Angeles, USA. Recently, I tried in my cooking recipes puréed supermarket-bought good-quality organic all-natural (no chemical additive) 6%-and-4%-fat cottage cheeses in lieu of ricotta - and because I could not get good farmer cheese, either -, and the results were surprisingly good - not exactly like ricotta, of course, but REALLY good in their own rights ! These organic cottage cheeses in the U.S. were surprisingly reasonably priced and not expensive at all ! Please give them a try.

There is no need to eat huge portions of pasta, especially when it is freshly made from basic, good, clean ingredients. This is REAL food! I am (technically) a non-drinker, yet when I lived in Italy for one year, I enjoyed wine with lunch and dinner. Why? The wine goes so well with the food!
The thing about the women’s lib movement that cracks me up is that they conformed to the notion that homemaking wasn’t challenging enough. Or fruitful. Or that it was confining. I think that’s a sad excuse. Because look at what Maria has been doing for decades. Working tirelessly. Honing skills that matter. Keeping her family fed and happy. Women of her generation are, by and large, tougher than steel. We think we have gained so much, and yet- I can’t see many of my generation doing this.
Elder women work too. My grandma worked in the field and in site constructions, and her mother too. They were strong cause they made everything by hand and walked a lot. My grandma took the firewood in a forest at 5 km from her home, by foot!
I hope the other crew got pasta too! I haven't an eighty-seventh of Maria's level of skill in terms of pasta-making, but I have *got* to do the sage butter thing. My sage has done really well this year, and I need to appreciate it in this simple, fresh-direct fashion.
The Korean crew just reminds me of my "Noodle Nonnas" idea :D Noodle/rice dishes from asian grannies would be wonderful. Perhaps starting in S.Korea is viable using that crew as a connection somehow? Then moving on to Japan and China! ^.^ I'd love to do it myself as a sister series but lord knows the logistics and even the basics of the filming and such, are beyond me haha
Several of us have lamented that we will never again cook with our our own German, Irish, Jewish (etc!) grannies. Vicky has encouraged us to dilm the grannies we have left before it’s too late.

I like to think in my head its part of your scheme to achieve World domination through Pasta Grannies! 😁 [How many languages is thew book translated into anyway?] The way those tortelloni moved around that sage butter bowl they looked a great texture, yielding but not enough to break.I could demolish a heap of them right now, they looked so good.
