I am 82 and have a renewed interest in cooking and baking since watching Becky. I cut most of her recipes in half or even quarters because I cook for one but I am eating better.

cook cornbread in your cast iron skillet. put it in a very hot oven with some shortening (tablespoon or 2) before you start mixing ingredients. let it get good and sizzling hot. pour your batter into that hot skillet and cook as usual in the oven and you will have the most delicious crispy top and bottom with a tender and moist center.

Hi Becky, when I make these kinds of infused alcohols, I dehydrate the fruit when I am done. The dehydrating procedure removes the alcohol, so you are left with the flavor, but not the booze. I make one with cherries and rum, and the flavor of those cherries end up amazing. Merry Christmas

Also, true story short version. A friend and her family were stationed in Germany. Christmas party for officers and spouse - she didn’t dance and their best friends husband didn’t dance so she and he sat on sofa and drank the Christmas punch that took like 3 months to make - she didn’t know that you weren’t supposed to eat the fruit and their friend didn’t know she was doing so. After 2nd cup she said she could not feel her face😂
Both my mom and me have been watching acre homestead for about a year and learned a lot. Just a tip: Remove Sharpie ink from the tops of metal or plastic lids with rubbing alcohol. Also, you can use the fruit that's been soaking in the various spirits in a fruit cake. My mom used to make a "Friendship Bread" (it was more a cake than a bread, though) that used fermented fruit, so I would expect substituting with the alcohol-soaked fruit would probably work well. Also, I have prepper veggies for roasting and put them in gallon sized freezer bags - complete with seasonings and oil. When you have everything in the bag, it's easy to make sure all the veggies are fully coated - and a gallon size bag completely fills a large cookie sheet for roasting.
My thought too on fruit!! You soak fruits for fruit for Christmas; so my thought was they would make soo good apple upside down cake! Caramel and infused apples would be sooo good in my mind!!
@@cjpeek To prep veggies for roasting, would be to cut them into slightly larger than bite-size chunks. Small potatoes get halved and/or quartered, thick slices of winter squashes are cut in half or thirds after peeling (except for the ones with edible skin), and all are cut to similar size. I do not cook the veggies before freezing them, typically, but on the occasions where I go ahead and roast more than one meal's worth, I do freeze the leftovers after they have cooled. There are times I only freeze the raw veggies and sometimes I go ahead and put in the oil and seasonings before freezing. It's really whatever I've got the energy to do at the time. 😜

We had a blast a few years ago making raspberry, blackberry, rhubarb, plum, peach liquor. It was delicious! Also, I discovered that the paint store has nylon strains similar to these nut bags for a fraction of the cost. They wash up like a dream. They are used to strain paint and the cost is sooo much cheaper than nut bags

Something happened at work today that made me think of you. I work as a Cashier at Fareway. Its a grocery store that is local to Iowa and I think some surrounding states. A woman had ordered a veggie tray for Christmas tomorrow. As she was waiting in line she dropped it and lost some of the veggies out of it. Some celery, carrot, and cauliflower. A woman behind her in line asked me as she was checking out if she could have the veggies for her chickens lol. It made me think of you because I went ahead and let her have them. Better they go to someones chickens then rot in the garbage in a plastic bag. Merry christmas hon.

Thank you for motivating me to make freezer meals. We just moved from Texas to Wisconsin and I made all my meals early and froze them for my family’s visit just in case we got weather and lost power. We did get weather, but thankfully kept power and I have never been stressed bc I was prepared. We were married 7 years before we tried to have kids and our relationship was mature and ready for the twins God blessed us with. I just got the Presto electric pressure canner. It has become my favorite kitchen gadget ever! It’s easy to use and now I’m not clogging my freezer up with broth. After the holidays, I’m going to do chicken and some veggies. Thank you for showing us this fantastic time saver.
I just did a huge dessert in a jar day not long ago. I did 10 different desserts and 3 different spice mixes for 5 different families for Christmas! Enjoy your first Christmas as a family of 3!
Don't know if you saw the America's Test Kitchen short but they said that you can caramelize onions quicker by steaming them for 10 mins with a bit of water and a lid on them taking the lid off and turning down the heat. I haven't tried it yet but it makes sense.
Oh my goodness... Please use the fruit for baking (add to a simple spice snacking cake) or puree for a spread. The brandy pears would be lovely diced and served over ice cream.
The 1/2 gallon jars are more than half full, so NO, they would NOT have fit in the quart jars. Really enjoy your videos! Have trouble making myself eat on a regular basis, but watching you cook makes me hungry and gets me to eat dinner more often. I enjoy your enthusiasm so much! Thank you!!
I think when using the eggs you might need to reconstitute it first before adding to the mix. When using egg replacer powder you have to mix and let sit for a minute before adding to recipe.
That fruit would be great in a fruitcake or a steamed Christmas pudding or in homemade ice cream or a great jam or sauce to pour over, well anything! okay I admit it, I am hungry watching this and it all looks yummy! Thanks for great video Becky once again.Anne 💜💜
My grandma used to make alcohol fruit. She would grind the fruit up, add sugar if needed, add spices depending on the fruit & put in freezer for an ice cream topping for her card parties.

I just wanted you to know that your "corn bread" recipe is really a corn cake recipe. Corn bread has equal to or more corn meal than your recipe has. And even a sweet corn bread has a lot less sugar. I am going to try your corn cake recipe because it sounds delicious. I'm sure your recipe is a family favorite, and I don't mean to criticize. I just thought you'd like to know that there is a difference between the two. All the best to you and yours!

Got canning tongs, a jar funnel and jars from my 20 year old son, a heated propagator from hubby and a lemon, orange, lime and fig tree from my mum for Christmas Feeling loved and very excited for next year's season even with carrots, parsnips and sprouts still out there. Thanks for all the inspiration 👍🥰 I know you really want to taste test the drinks when baby has arrived but when I was breast feeding I had my 21st birthday and alcohol made my now 27 next week son throw up all his Brest milk for the next 24 hours, it was all curdled too, so I went alcohol free for 3 years and 9 months, totally worth it I now consider a Bailey's pushing the boat out. He didn't like orange or curry either, fussy git😁
Hi Becky. A friendly tip, I make duxelles (brown chopped mushrooms with onion/garlic/shallots/leeks - any or all of those) cooked in butter (any fat will do), salt and pepper.) I don't put herbs or spices, to leave it a blank slate that can go in any dish, any cuisine. Freeze or can. (You actually made a duxelles for your stroganoff, hahaha. oh well.) My favorite cornbread uses cornmeal and a can of corn kernels. It's so moist and delicious and very corn forward. I can't drink alcohol anymore but I can taste it. Just taste it, spit it out and rinse your mouth with lots of water. Just DON'T Swallow. I have serious gout and if i swallowed even a little bit it would cause a flare up. using this method I have no flare ups at all. Cream Cheese and Sour cream are great substitutes and work in either direction (I also use yoghurt similarly) All the Best from Oaxaca Mexico...Jim

I’m in Australia and not many people can here and the jars etc, are expensive compared with your part of the world. I love to do it as a hobby as I just enjoy it so much. As Becky would do you get a stock pile of jars and lids over time and the only thing you can't reuse is the sealing flat lids. You go girl you'll have a ton of great canned healthy food before you know it
To strain something with a fine strainer, try using a European yogurt strainer. The fruit and juice will all go into a bowl first to drain then you can pour it into a jar. It will be so much easier to handle since the bowl is wider and won’t tip over.
When things are calmer, try baking that cornbread southern style, Iron skillet 9-12", small amount of grease or oil , you can use some bacon grease instead. Put pan in oven. Turn oven to 450 to preheat. Once hot take it out, put batter in pan. Back in the oven to cook until browned 20-25 minutes usually. May be a bit longer due to your recipe being so heavy on wheat rather than cor. When done flip onto another pan or even a dinner plate. Slice, slather in butter and forget about the rest of the meal! 9" pan would hold about 1/2 your mix. even more flavor switch to buttermilk instead of sweet milk.

Before washing your used lids, use rubbing alcohol on a paper towel to rub off the old permanent marker labels. When I make fruit liqueurs, once I’ve drained the liquor off, I use the marinated fruit to make jam or jelly rather than composting it. So nothing is wasted. My favourite is damson gin jam.

Hey Becky I’m sure you know this but just in case, if you take some rubbing alcohol with a paper towel you can wipe off that ink from your used canning lids. I use the 91% but I don’t think it matters, just whatever isopropyl alcohol you have on hand will work, the permanent ink comes right off 😊

A tip for keeping your knives sharp: You should always hand-wash them. Putting them in the dishwasher can ruin the temper with the heat. Once the temper is ruined, it is much harder to keep a sharp edge on your knives!

If you prepped more of those cornbreads, you could try freeze drying some chopped peppers, to do like a jalapeño cheese cornbread, then just add fresh cheese.

Thank you for sharing. The fruit is edible and yummy after soaking in alcohol. I would help my grandma (60+ years ago) chop the fruit finer and make apple/ fruit bread. Also, coffee filters work well for straining out fruit from alcohol.

Your fruit from the infused alcohol remind me of Rumtopf (German origins). It is berries and other fruits with high-proof rum and sugar left to stand for months and enjoyed at Christmas as a topping on pound cake, waffles or ice-cream etc.

Taking a break from making Needhams candy to watch. My daughter is doing orange, raspberry and mint candy. When I finish dipping everything I usually take whatever is left of the chocolate and mix it with raisins, pecans and dried cranberries. That's my favorite sweet this time of year. I also only cook cornbread n a hot cast-iron skillet, but instead of oil r shortening I use bacon grease, it gives it a extra yummy flavor 😋 😉💞

There are times I only freeze the raw veggies and sometimes I go ahead and put in the oil and seasonings before freezing. It's really whatever I've got the energy to do at the time. 😜

We had a blast a few years ago making raspberry, blackberry, rhubarb, plum, peach liquor. It was delicious! Also, I discovered that the paint store has nylon strains similar to these nut bags for a fraction of the cost. They wash up like a dream. They are used to strain paint and the cost is sooo much cheaper than nut bags

Something happened at work today that made me think of you. I work as a Cashier at Fareway. Its a grocery store that is local to Iowa and I think some surrounding states. A woman had ordered a veggie tray for Christmas tomorrow. As she was waiting in line she dropped it and lost some of the veggies out of it. Some celery, carrot, and cauliflower. A woman behind her in line asked me as she was checking out if she could have the veggies for her chickens lol. It made me think of you because I went ahead and let her have them. Better they go to someones chickens then rot in the garbage in a plastic bag. Merry christmas hon.

You don't even need the second spoon. Just use the utensil used to mix the food in the pot and a tasting spoon. That is one less spoon used.

Thank you for motivating me to make freezer meals. We just moved from Texas to Wisconsin and I made all my meals early and froze them for my family’s visit just in case we got weather and lost power. We did get weather, but thankfully kept power and I have never been stressed bc I was prepared. We were married 7 years before we tried to have kids and our relationship was mature and ready for the twins God blessed us with. I just got the Presto electric pressure canner. It has become my favorite kitchen gadget ever! It’s easy to use and now I’m not clogging my freezer up with broth. After the holidays, I’m going to do chicken and some veggies. Thank you for showing us this fantastic time saver.
I just did a huge dessert in a jar day not long ago. I did 10 different desserts and 3 different spice mixes for 5 different families for Christmas! Enjoy your first Christmas as a family of 3!
Don't know if you saw the America's Test Kitchen short but they said that you can caramelize onions quicker by steaming them for 10 mins with a bit of water and a lid on them taking the lid off and turning down the heat. I haven't tried it yet but it makes sense.
Oh my goodness... Please use the fruit for baking (add to a simple spice snacking cake) or puree for a spread. The brandy pears would be lovely diced and served over ice cream.
FYI, preheat a cast iron skillet with bacon gease add corn bread batter and bake in skillet. Ups the corn bread flavor 100 times! Congrats on Baby!!!

I think when using the eggs you might need to reconstitute it first before adding to the mix. When using egg replacer powder you have to mix and let sit for a minute before adding to recipe.
That fruit would be great in a fruitcake or a steamed Christmas pudding or in homemade ice cream or a great jam or sauce to pour over, well anything! okay I admit it, I am hungry watching this and it all looks yummy! Thanks for great video Becky once again.Anne 💜💜
My grandma used to make alcohol fruit. She would grind the fruit up, add sugar if needed, add spices depending on the fruit & put in freezer for an ice cream topping for her card parties.

I just wanted you to know that your "corn bread" recipe is really a corn cake recipe. Corn bread has equal to or more corn meal than your recipe has. And even a sweet corn bread has a lot less sugar. I am going to try your corn cake recipe because it sounds delicious. I'm sure your recipe is a family favorite, and I don't mean to criticize. I just thought you'd like to know that there is a difference between the two. All the best to you and yours!

Got canning tongs, a jar funnel and jars from my 20 year old son, a heated propagator from hubby and a lemon, orange, lime and fig tree from my mum for Christmas Feeling loved and very excited for next year's season even with carrots, parsnips and sprouts still out there.

I know you really want to taste test the drinks when baby has arrived but when I was breast feeding I had my 21st birthday and alcohol made my now 27 next week son throw up all his Brest milk for the next 24 hours, it was all curdled too, so I went alcohol free for 3 years and 9 months, totally worth it I now consider a Bailey's pushing the boat out. He didn't like orange or curry either, fussy git😁

Use a pastry blender for chopping. We have been doing it for years. Especially great for egg salad.

Hi Becky. A friendly tip, I make duxelles (brown chopped mushrooms with onion/garlic/shallots/leeks - any or all of those) cooked in butter (any fat will do), salt and pepper.) I don't put herbs or spices, to leave it a blank slate that can go in any dish, any cuisine. Freeze or can. (You actually made a duxelles for your stroganoff, hahaha. oh well.)
My favorite cornbread uses cornmeal and a can of corn kernels. It's so moist and delicious and very corn forward.
I can't drink alcohol anymore but I can taste it. Just taste it, spit it out and rinse your mouth with lots of water. Just DON'T Swallow. I have serious gout and if i swallowed even a little bit it would cause a flare up. using this method I have no flare ups at all.
Cream Cheese and Sour cream are great substitutes and work in either direction (I also use yoghurt similarly)

I’m in Australia and not many people can here and the jars etc, are expensive compared with your part of the world. I love to do it as a hobby as I just enjoy it so much. As Becky would do you get a stock pile of jars and lids over time and the only thing you can't reuse is the sealing flat lids. You go girl you'll have a ton of great canned healthy food before you know it
I love the jar meals!!!!!!!!!!!!!!!! They're beautiful. My grandma used to make them with us when she would come to visit. Great memories.
To strain something with a fine strainer, try using a European yogurt strainer. The fruit and juice will all go into a bowl first to drain then you can pour it into a jar. It will be so much easier to handle since the bowl is wider and won’t tip over.

When things are calmer, try baking that cornbread southern style, Iron skillet 9-12", small amount of grease or oil , you can use some bacon grease instead. Put pan in oven. Turn oven to 450 to preheat. Once hot take it out, put batter in pan. Back in the oven to cook until browned 20-25 minutes usually. May be a bit longer due to your recipe being so heavy on wheat rather than cor. When done flip onto another pan or even a dinner plate. Slice, slather in butter and forget about the rest of the meal!
9" pan would hold about 1/2 your mix. even more flavor switch to buttermilk instead of sweet milk.
Add greens or blackeyed peas on the side and enjot some southern goodness!
Use hand sanitizer to clean off the old marker on your used lids. IT REALLY WORKS!!!

Mushroom note: Costco has a large container of dried, mixed mushrooms that come out to about the same as fresh price-wise. They’re really good. Easy to keep on the shelf without any of the work.
Before washing your used lids, use rubbing alcohol on a paper towel to rub off the old permanent marker labels. It works great. 👍🏻 Could you sprinkle the strained pears & apples with a little sugar then freeze dry them? Hmmm… I might have to give that a try. Some alcohol infused fruit candy. Yum! When I make fruit liqueurs, once I’ve drained the liquor off, I use the marinated fruit to make jam or jelly rather than composting it. So nothing is wasted.
My favourite is damson gin jam.

Hey Becky I’m sure you know this but just in case, if you take some rubbing alcohol with a paper towel you can wipe off that ink from your used canning lids. I use the 91% but I don’t think it matters, just whatever isopropyl alcohol you have on hand will work, the permanent ink comes right off 😊

A tip for keeping your knives sharp: You should always hand-wash them. Putting them in the dishwasher can ruin the temper with the heat. Once the temper is ruined, it is much harder to keep a sharp edge on your knives!

If you prepped more of those cornbreads, you could try freeze drying some chopped peppers, to do like a jalapeño cheese cornbread, then just add fresh cheese.

Thank you for sharing. The fruit is edible and yummy after soaking in alcohol. I would help my grandma (60+ years ago) chop the fruit finer and make apple/ fruit bread. Also, coffee filters work well for straining out fruit from alcohol.

Your fruit from the infused alcohol remind me of Rumtopf (German origins). It is berries and other fruits with high-proof rum and sugar left to stand for months and enjoyed at Christmas as a topping on pound cake, waffles or ice-cream etc.

Taking a break from making Needhams candy to watch. My daughter is doing orange, raspberry and mint candy. When I finish dipping everything I usually take whatever is left of the chocolate and mix it with raisins, pecans and dried cranberries. That's my favorite sweet this time of year.
