    Becky this is such a genius idea! I did this about 6 months back and it is such a game changer for garlic users. love, Love, LOVE having ready to go real minced garlic in the freezer. Do you do ginger the same way? Do you peel it first? I hunted for a ginger video but couldn’t find it. You’re an awesome young lady Becky. You teaching this 66 yr old lady new things!

    It would be great if you spent one episode, showing us how to make artesian bread and garlic knots. I have to say I was just disappointed that you skipped, showing us how to make the garlic knots and just showed us them after they were already made. I really enjoy your episodes.

    Hey Becky :) Can you do a "Making the most of your freezer" video - explaining what freezer burn is and when it happens, and listing everything you can freeze that most people don't think you can. i.e. things like butter. And also showing how you prep different things for freezing. Thanks :)

    Becky your filming and editing skills have improved so much. I love the way when you go from room to room, the camera is already there when you come in. It makes us feel like we made that journey with you. Also when you change the position of the camera. It makes it really interesting. Well done.     With the garlic you can also put the whole lot blitzed into a freezer bag, push it flat and lay on a tray, then use a ruler to indent a grid onto it, freeze and then you just snap off a square from frozen when needed. Saves time on the scooping and takes up less space in the freezer.

    I love how easy you share your life and your work I am 82 years old and I use to have a garden every year and canned everything. I made all the jams and tomatoes, I even made beef stew and pressure cooked. I could go on and on. I love watching 🥰🥰U

      I struggle getting my kitchen aid bowl locked down. It's lovely when it comes loose while it is running. I love watching Becky. She leaves the struggles in and goes with it. I'm thankful she was not wearing the baby! He is growing like a weed isn't he. I love hearing him babble in the background.

    My grandmother's hard and fast rule when making jellies, jams or preserves with blackberries or blue berries was always use brown sugar instead of white sugar. She used white sugar when making her other jellies etc, but said always use brown sugar with the dark color berries. It really does change and enhance the flavor.

    My mom used to blend garlic, onion, parsley, eschallot together and keeps in the fridge for seasoning meats before cooking. I really need to do it too.

      I do something similar with roasted peppers, garlic, onion, and whatever other veggies I want to add that time. Then I freeze them in small containers until I need them for ground beef for chili, cottage pie, spaghetti sauce. etc.

      @@pmbramucci1056 I chop onion, garlic, bell peppers and put them in mini snack ziplock bags and freeze in a large freezer bag. I often add celery to some. They are my most complete seasoning in a PKG.

    I was at Sam’s club last weekend, they have a 3lb bag of peeled garlic for like $10-$11, totally worth it! I preserved it the same way you did, only difference being that I used a silicone mini muffin pan instead of the cookie scoop.

      I bought that garlic at Sam's too during pickling season, but I should warn you it comes from China. I did not know that and won't buy it anymore. They have terrible growing practices for garlic.

    I just read/saw somewhere online about wrapping full heads and cloves of garlic in a moist towel and microwaving it for a minute. Then when it comes out the cloves just slip right out of the skins with a gentle pinch. I tried it and It Works! So cool and saved time. 😊

    Hi Becky! I’m from Ontario Canada. Putting food outside to cool is something I’ve done for years! I tell the family it’s in ‘God’s Fridge’. Thanks for all the great canning advice. I’ve just started canning last week and was going to do some chicken broth today too!

      I put some whipped cream on the deck (on our acreage) and a stray cat enjoyed it immensely! I even had set a plate as a cover but he just knocked it off. 😝 We started feeding the cat and he stuck around for months even though he didn’t allow us to touch him.

      Rubbing a bunch of cloves between two towels is a relatively easy way to get most of the peel off.

    I finally did a cooking day fully inspired by your old breakfast freezer meal video. 🎉 My family is loving everything! Baked oatmeal, breakfast casserole, 21 breakfast sammies, 10 breakfast burritos, and 30 waffles to toast (made individually cause I only have a single🤣).     I'm Australian/Lebanese. My mother makes garlic aioli which she keeps in the fridge. It is mainly used when eating barbecued (I think you refer to it as grilled) chicken and it is fabulous! We also use the garlic aioli at times in salad dressings and when in need of garlic in a recipe that requires stovetop cooking. She makes the garlic aioli using fresh garlic.

    Becky, FYI chicken in pints only can for 75 minutes, quarts are 90 minutes. I am always canning chicken for my dogs mostly. Love your channel.

      I did solid coconut oil and froze into balls. Just throw one in your skillet and start cooking.

    Hi Becky... I do this same process with my tomato paste, refried beans, the possibilites are endless... refried beans I use a large ice cream scoop or silicone muffin cups.. flash freeze and when I need a serving or two of RF beans I just defrost even in the microwave works.. and no waste... Great videos!!

    When I was first married, my husband was in the US Air Force stationed on Mississippi. Our church had fund raisers of chicken gumbo dinners. They were donated by a local family who owned a restaurant that had "Tue all you can eat of fried chicken." The gumbo was chicken backs with rice. It was delicious.

      I highly recommend getting a pressure canner. I used to freeze all my broths, but getting them out of my freezer left more room for whole freezer meals. Becky totally influenced me so I bought the same digital counter top canner. It is well worth the upfront cost

    You could probably store garlic pucks in a canning jar in the freezer, or in ziplocks inside large canning jar in freezer

    Not sure what your going to do with the chicken bones, but I cook mine down until they are soft, let dry then grind down to powder. Bone meal for the garden and zero waste.

    I use an old freezer as a potting/seeding station for me greenhouse. The inside is still good for storing dirt, seeds, etc that you don’t want critters to get into. The height is just right for most of my projects. I put a large poly cement mixing tray on top of the freezer, fill it with my dirt and pot away! Just finished the first 2500 seed starts early this month. I do about 10000 total plants for my hobby greenhouse business, but many of them will be transplanted from plugs.

      Great idea for repurposing. Becky could also use her dead freezer outside for chicken feed storage. I bet she could paint it so cute and no critters could get in.

    Hi beccy, I found out another way of preserving garlic and I do it all the times so easy. I chop the garlic in my mixer with half an onion, put it in a jar put garlic and onion mixed together and top the jar with oil of your choice to cover the garlic and put it in the fridge. And use as needed lasts for ages.so you don't get a smell of garlic in you freezer xx

      Food safety experts don't recommend storing garlic in oil in the refrigerator for more than 4 days and never to store garlic in oil at room temperature. Because the garlic hasn't been pasteurized by heat to destroy botulism spores there is a very real risk that you may cause serious illness or death.

    Hi Becky!!! You never cease to amaze me. Now you're doing it all along with caring for your newborn baby!!! My goodness!!!
    I wanted to share a lil tip from my late Grandma who was an amazing cook!!!
    To speed up getting the fat out of the chicken broth , she added ice cubes to the broth and that made short work of it.
    I'd let the broth cool a bit first, then add the cubes, just so that you dont have to water down the broth too much. Also the shallower the container that you have the broth in, the less ice cubes that you'll need to add.
    Hope that helps.

      One time while on vacation our garage frig came unplugged and all meat in freezer spoiled. We were told to put charcoal briquettes inside and it worked. It took about three rounds and a couple of weeks but it was no longer smelling.

    Nice job with the onion powder! I prefer to store my seasonings in smaller jars. So, if one is dropped and broken, I don't lose the entire batch and still have some left to use.

    Becky, I have the same Presto Electric canner and according to the directions water bath canning requires water to the fill line. You are filling it to above your jars as we would with a "normal" water bath canner. Not sure you will get a long term seal on your items

    Becky, I love watching your videos. Hearing baby A in the background is so precious. I also get a laugh out of seeing your dogs pop in and out of the kitchen. I have two border collies and they are constantly under foot when I am cooking. I live in Quinte West, Ontario and in the winter, we use our deck just off the kitchen as an extra fridge. I too am expanding my garden this year and look forward to what I can harvest right along with you.

    I’ve been doing a lot of freeze drying of my broth, beef chicken, turkey condenses it down takes up less space, and super powerful as far as flavor

    I love your garlic idea. I buy the pealed garlic at Sams and I will have to try that next time. I also highly recommend keeping some of your freeze dried onions not powdered, they are great to toss into recipes. I love them in my meatballs because you get the chunks of onions without the meatballs getting to loose

    Make blueberry pie filling, wonderful when you need a pie in a hurry! Can also use for fruit turnovers,cobblers etc

    May I suggest some sound deadening material around the kitchen for your videos? We used to install radio station studios in 3rd world countries and the nationals very ingenious with little to work with. You probably don't want paper egg cartons attached to your walls or ceiling 😂, but some rugs on the floors would help. Maybe some small carpet pieces on top of refrig and cabinet tops would also really help. Your videos are so inspiring. When I'm done with one, I head to the kitchen to can or dehydrate with renewed vigor. 🥰

    You should freeze that blueberryjuice in small bottles for the baby to enjoy frozen on a hot summerday! We got that as kids, bring back good summer memories!

    I love your garlic idea. Freezing with oil. I did that with my rosemary last year, had little moulds so put some chopped up in with avocado oil. Froze and bagged. So handy in winter here in Alberta Canada.

    Today was a very snowy day here in NH . When I woke up I felt like I could be a kitchen warrior like Becky. Hours later I had broken down and cooked chicken for broth and made 2 chicken pot pies with homemade gluten free crust. I made maple baked custard, and brined my gray corned beef( yes I'm late!!) So glad to have a kitchen day, but wish I could have gotten more done!😊

    It was fun watching you use the snow to cool. When we have big family dinners, I would put stuff that needed to stay cold out in the snow on our deck. Worked great!!

    Hi Becky I blitz fresh garlic and then mix in crystal or rock salt and freeze in a container. The salt stops the garlic freezing together, so you scoop what you need.

    Baby Acre is so so cute when he babbles in the background its like he wants to be a you tuber too and becky we enjoy your videos so much its so nice to always see real people who don't hide there mistakes and love when there successfull .
    Whenever I watch your videos I am always inspired and greatful of when you include us all when you plant seeds and when your harvesting the fruits of your labour it make us all feel good even those who for some reasons can't plant or sow out anything this year so thank you for being you and don't ever change that

    Stopping the video just to say how you inspire me so much. I’m sitting here thinking hmm French bread cut in half horizontally smear some thick butter and a bunch of that garlic sprinkle with a little parsley and paprika and a bit of that onion powder and bake until, crispy. And make a couple extra wrapped tightly with foil and then plastic wrap to freeze. Get it out and thaw it partially or not at all before baking. Perfect garlic bread ready when you want it.

    Also the oil and some salt in the garlic helps preserve it a bit better than without 🙂. So good choice to add the oil.
    As an Indian, I do this with ginger-garlic paste that we use in a lot of our recipes.

    From the thumbnail pic, I figured this was more cookie dough. Pleasant surprise to instead see a great way to have fresh garlic on deck 24/7! If I do this, it will definitely be will pre-peeled lol. Also, loved ALL your cookie dough recipes! You inspired me, and I was able to make cookie doughs all through December and my family was smitten to receive them come Christmas. Starting earlier this year!

    I froze chopped onions one year and my freezer smelled for 2 years. Ice cubes even had a taste of onion 😜. Now you have me wanting to try making onion powder. Love your videos, Becky!

      I vacuum seal my chopped onions and have no issues with that anymore
