  • Join me on a culinary adventure to the East African country of Kenya for a delicious but very frugal meal. Today I'm excited to be making Ndengu with Chapati for the first time. This recipe will feed a large family on a budget, or you can just feed one and have freezer meals for later. This is a delicious and nutritious meal that costs only dollars to make.
    NDENGU
    Mung Beans- green grams
    1 can diced tomatoes
    1 small onion diced
    1 bunch cilantro chopped
    Optional * curry powder
    Salt to taste
    CHAPATI
    1 cup white flour-use whole wheat flour if you have it. Can double the recipe
    ½ tsp salt
    1 tablespoon olive oil or whatever vegetable oil or lard you have on hand
    1/3 plus 1 tablespoon hot water
    To feed 10 - OR MEAL PREP FOR ONE- AND FREEZER MEALS FOR LATER
    Mung beans $3.99
    1 can diced tomatoes .55 ALDI
    1 bunch cilantro ALDI .49
    .40 butter Walmart Great Value 1/2 stick
    .20 garlic half clove .39 Walmart whole clove
    .30 flour Walmart Great Value .94 2 pound bag
    *optional curry powder .40, new bottle is $2.18 Great Value Walmart
    Total =$5.93 -$6.33

    Loved seeing this!! Kenya has a large Indian population (brought over to Africa as early as 1600s as slaves, and later for very cheap labor, by the Dutch and British). What you’re making is essentially moong dal, very similar to urad dal (maa ki dal, aka dal makhni but without the butter). If curry powder seems too strong for some, please try a bit of garam masala instead. Also, you can’t go wrong with masala chips and Kenyan samosas! Thank you for sharing :)

      Thanks for the info. Now I want to try the garam masala in the dish. I haven't used that spice much and I'm wondering how different it will taste. I'll have to add the masala chips and Kenyan samosas to my bucket list. I'll be googling later 😂. Feel free to share your favorite recipes.😉

    Did you know that the most common type of bean sprouts sold for salads or stir fries are actually mung beans? Very easy to do at home!

    In Chinese cooking, we make a lot desserts with mung bean. The easiest one is to make a chilled sweet soup of it. Water, mung bean, crystallized sugar, simmered until all the beans a soft and serve chilled. Sometimes I add water lily bulb in it. It’s a very summary soup. It’s supposed to cool you down. I also make a mung bean cake but that one is more complicated.

    So u can soak & rinse them for few days and stretch ur budget even further by using them sprouted ( they will be more filling )

    Koreans use mung beans - try mung bean pancakes! They are savory and delicious. Also, most vegan egg products are made with mung beans like Just Egg. You can easily make a vegan egg substitute at home with mung beans and make scrambles and omelettes

    I have a mini crockpot like that one. I use it to make a warm fruit compote for 1, warming gravy when cooking a big meal and all the stove burners are in use. To name just a few uses.

    I lived your video, but then again, I always love your content, from the ideas for different foods, & the cute ideas that I have gotten from your table decor on certain occasions...that has confirmed for me that it is nice to have a cute set up. I'll have to try making the chapati, I too watched our tribe of many make it, the grandmother from Kenya made it when she was here visiting, only she made chapati in the firm of rolls, like dinner rolls.     Looks great! I have purchased mung beans in an Indian grocery. I added them to a vegetable cutlet recipe. A fellow shopper told me I could plant mung beans directly in soil or I could sprout the beans in a jar. Thanks for the video. Your recipe is going on my to make list.

    I use the large tortillas from dollar tree browned on one side under the broiler , then flipped, buttered and sprinkled with an indian spice called either Hing or Asephoetida. I serve it with split mung bean dal.

      I put coriander, cumin,turmeric,and cayenne pepper in my mung bean dal.It is a less soupy version.For 7oz split mung beans soak for 3hours in 1and one half pints water.Then mix spices with aTbsp of water add the drained mung beans with spices,their liquid and 1cup water .cook for 15 minutes.can be topped with fried onion rings.

    I love moong beans and onions sambosas . An Indian dish. These beans splinted when u soaked them because they actually started to sprout ( which is a healthy thing. They are a whole intact seed not like red lentils which are split already when u buy them )

    African food is one of my favorites. Sweet Adejely is one of my favorite channels.
    And mung beans make the best sprouts. If you have some extra you should try it. They're my favorite sprout.

    Mung beans are used so much in Asian cooking. They are used as sprouts. They are so easy to sprout which magnifies the vitamins.

    That mini warmer is wonderful for melting chocolate… useful for baking when you need to dip cookies or truffles etc in warm chocolate.

    I can't wait to try these mung beans and "tortillas"! I'm into powdered things now -- while pricey to begin with, they are concentrated, keep for a very long time, and are very full of flavor. I can imagine powdered spinach instead of cilantro and some umami with powdered mushroom, along with a pinch or two of curry. Since my bean creations are only for me, I eat a pot full for a whole week at lunch. Mung means seem like a special treat. Please go with this geographic emphasis because trying new foods is great fun! Two requests though, there are a surprising number of people who need to avoid tomatoes (nightshades) and dairy. Thank you for your efforts as always!

      @Susan Jane. I have a bottle of powdered spinach that I use occasionally. Just have to remember that it turns your dish green. Lol. Didn't expect that the first time I used it.

      @@patpeters6331 Too true! Too much does cause color changes. The powders without additives helps, but so does moderation. If you make a smoothie with fresh spinach it's mega green. I've found that carrot and mushroom powder also cause color changes when used in quantity... but so does fresh carrot soup and stew with lots of mushrooms.

      Yeah I do the same. Make a big pot of something in the crockpot and then eat the leftovers for a few days.
      Where do you purchase the powdered veggies? I've never heard of them before. Interesting 🤔

      @@ArdentMichelle Nuts.com has some. Their prices are a tad high but I love their quality -- no clumping and super fine powder. And nuts.com has good resealable heavy-duty bags which is great -- powders get ugly fast if they get damp or wet. If you have a dehydrator or freeze-drier you can make your own -- not me but I've seen it done on UA-cam. Warning: smoothie supplement sellers often add junk to their powders. The best in my humble opinion have single ingredient powders with no flavorings, preservatives, or additives.

    I live in rural North East Missouri, I am vegan and a single. The Dollar General is 15 miles away, and the closest major chain is an hour away. Please consider some Dollar General vegan meals. I am a good cook and I love your channel, I am often learning something new from you.

    Ethnic dishes are the best! Thanks for introducing the mung bean. I actually have some in the pantry but have never cooked them. It looks like it can be in place of red lentils in the Persian version of dal adas.

      This has been wandering around my mind and I came up with the perfect reasons to try traditional foods from other countries and cultures -- these recipes have been around for hundreds of years in some cases making them tried and true, they are often are based on natural ingredients, and they can be simple to prepare and enjoy. Sounds like a big win to me!

    Mung beans are used to make traditional bean sprouts. These beans are also used to make pancakes in Korean.

      Wow I didn't know they were used to make our common bean sprouts and I love the idea of using them in pancakes because it would make them so much more nutritious. I wish this was my full time job. I would have so much fun😁 I want to experiment

    Went to the liquidation store here in my tiny town and paid $1.99 a pound for tomatoes, $2.00 for a medium-size loaf of bread, nothing special, $.99 for one small avocado, and I don’t remember what I paid for the rest. Altogether I got about five tomatoes because I’m going to dry them like you said, two bananas, one jalapeño, one loaf of bread, a bunch of cilantro, and one red pepper, which was really cheap for this area at a dollar. Total came to $8.76. No way am I gonna eat for $15 a week. I’ve got lots of stuff in my pantry and freezer so I’m not gonna go hungry but I wanted to challenge myself.

      The tomatoes are higher than the .99 per pound I can normally get them for, but the other items don't sound like a bad deal. I have a lot of stuff in my pantry too. Better to just supplement and use up some pantry items. I need to do this 👍

    Mong bean either green or red cooked in sugar and orange zest makes dessert. Serve hot or cold. A Chinese Comfort food.

    What kind of curry did you use? Im not a huge curry fan. I dont dislike it..it just isnt my favorite. I've never tried spicy curry and I do like spocier foods. Medium heat is what I enjoy most.
    ETA..this looks absolutely delicious!

      I used the Walmart brand. In the last video I used the curry powder from Wilco's bulk food section and it has been my favorite so far. The Winco is fairly mild and the Walmart has some heat to it.

    I got online and checked my local Walmart for mung beans and it looked like they had to be shipped but I would not say they were cheap.

    Please try authentic sri lankan food..so many vegetarian and vegan foods..meat and fish is always a side dish, never center stage..my mother is sri lankan, so I grew up with hone cooked sri lankan food. Sri lankan mung beans curry is so so so creamy 😍😍😍😍

      Thanks for letting me know. It was weird that they split a little in the water. Next time I'm going to cook them on low for longer, so that I can feel the satisfaction of using my crockpot without overcooking them 😂

    what do you mean by regular oil? to me olive oil is my standard and i stay away from canola oil and vegetable oil which can have some bad side effects and vegetable oil is 9/10 just soybean oil which is terrible for yiu

      Yes olive oil is my standard oil as well. In the context of what I was talking about, I said if they didn't have olive oil that any other oil would work.

    Don’t waste the coriander stalks. They taste the same and when chopped and cooked are just as good.
