    Ingredients:
    - 250g of grated sharp cheddar cheese
    - 2 tablespoons of butter, plus extra for greasing
    - 370ml of evaporated milk
    - 400 ml of milk
    - 3 eggs, beaten
    - 1 teaspoon of mustard powder (preferably English mustard for extra flavour)
    - 1/2 teaspoon of cayenne pepper - optional
    - Salt and freshly ground black pepper to taste
    - 600g of day-old bread (white or whole wheat), crusts removed and cut into small cubes - optional
    - Optional: 2 tablespoons of freshly chopped chives or parsley for garnish
    oven to 350°F (175°C) 30-35 mins
    Air fryer 320°F (160°C) 20-25 mins

    Takes me home ! We could not make it during the war but remember when we were able to get enough cheese it was back on the menu. My aunt used to add a few dollops of fried onions throughout , It was delicious on a cold wet Glasgow day. Love your dishes. One love from Jamaica

    Traditional Scottish pudding is lovely & soft. Similar texture to a souffle. My mum & granny etc used to make it for high tea.

    Whilst making bread pudding according to your recipe, it crossed my mind that this could be made into a savoury dish ... and here it is! Husband says no, but I will make it for myself - it will be perfect with a salad and a delicious dressing. Thanks again!🌷

    😮 Soft in the centre, crispy top, loads of cheese…all of my favourite things. This looks so delicious and so simple. It looks like my three year old granddaughter would have great fun helping me make this and would very much enjoy eating too. It’s not something I’ll be making on diet days though. 😏. I really find it hard to find just the exact recipe, the buttery, slightly salty and sweet pastry crust that you would enjoy just eating by itself...Thanks Rik. Keep up the good work.

      Ok - let's say sour or sweet - eating apples are usually sweet, and the more green type apples (not in every case) are usually more sour. That will be classed as a cooking apple. I hope that helps you. Best, Rik@@anamarialamoneda1805

    I use a lot of evaporated milk too. I love the creamy texture it brings to soups and sauces!

    i was going to make your bread pudding recipe, and then this popped on. i browned some hamburger and heated some caramelized onion to stir in as well. it smells great in here.

    This is a great way to use up old bread and even cheese scraps (we keep a bazillion types of cheese in our fridge). It could also be adapted by adding things like onion, bacon or some veggies mixed through. Such a versatile recipe and so economical too, which is important these days.     A lovely recipe, and delightfully traditional. Tragically, cheddar is unobtainium here in Argentina, and one of the things I miss the most about home.

      Thanks for sharing! In Argentina, the cheese that most closely resembles Cheddar in texture and flavor is called "Queso Tybo." This semi-hard cheese is smooth, with a mild to slightly sharp taste, similar to young Cheddar. Queso Tybo is often used in sandwiches, on pizzas, and as a table cheese, much like Cheddar. It's not aged as long as traditional Cheddar, which results in a softer texture and milder flavour profile. Although not identical to Cheddar, Queso Tybo offers a versatile alternative for those looking for a similar cheese in Argentina. Best, Rik

    I've noticed that in many recipes you use evaporated milk. Could you possibly do a quick video on why you do this and when and when not to use use evaporated milk and how dishes benefit from using it. I know it is probably a personal choice thing but many people just don't know how to use the stuff.

      I use evap milk say for making cheese sauce. You use approx 1 part evap to 4 parts water. It gives a creamier taste. It works well for custard too. And it's cheaper than using pints of ordinary milk. It is especially nice to use when making rice pudding. If a recipe says you need half a pint of milk say, pour some evap milk in the measuring jug and add water to the required amount. The amount of evap depends on how rich you like it for your personal taste.

    When I was at school in the 70s in England we were given a recipe for bread and cheese pudding I haven't made it for a while but it was basically the same and I'm gonna have to make it again

    looks great and well worth a try. I'm a 62yr old Scot who has never heard of this anywhere in Scotland I've been, where is the recipe from? I love new things to try.

      This is getting mixed reports - Many know of and have given their experiences, some from Glasgow, others haven't heard of it. Iv'e just Googled and there are versions on the net. Best, Rik

      I've asked folks from Clydebank and Erskine in the West to Larkhall East of Glasgow and no one has come across this recipe. My web search was primarily folk on you tube copying your recipe lol not a single historical article. I thought maybe WWII rationing recipes might contain a reference but no luck so far. I'll keep looking.

      A simpler version of this was the last video up on rationbook rebeccas channel, but this is not WW2 Ration. Far too much cheese. Lol.
      Her's is called Aunt Em's,or Emily's? cheese pudding, I think, and she shows a Reader's Digest book she bought. Hers is more like a cheese and green onion sandwich, cut in quarters, laid upright in a dish, with.milk, egg and mustard, I think.it was, poured over, then baked.
      The Reader's Digest book is a selection of recipes from big old country houses. The RD compilers went from big house to big house, finding old recipes. So you might get a selection of recipes for an Edwardian breakfast, a 1930s party, an 1880s invalid diet... All sorts of things. So it is a period recipe, but I am guessing between the wars. But you might get some extra info from that book

    I have never seen or heard of a cheese pudding but when I was young mum made a cheese and onion pie which we all raved about and often would ask for! Would you be shocked if I said that I always used low fat dehydrated milk! This is for convenience because a long way from a shop! I will find a way around this!

      Not shocked at all. I use UHT, Evaporated milk all the time. It convenient and keeps well in the cupboard. I don't have hang ups on anything like that, leave that to the moaners and those privileged people that do not have to make do! Good on ya and thanks for sharing.     My Gran used to make this - so glad to have the recipe after all these years! Thank you! She also used to make something she called Tipsy cake - do you have a recipe for that too, by any chance? It was made with leftover cakes and had icing on the top.

    I'm going to do this with gluten free bread. I had a good result with sage dressing at Thanksgiving. I love all your pies, but I haven't figured out the gluten free way of doing those🫤

    To be honest, Rik, I've never heard of this. Cheese and carnation milk? Then I thought of christmas cake and cheese. The Braveheart in me says, "Give a go." I'll let you know how I get on.

      Well done. We owe quite a lot to the ingenuity of these old recipes, that were developed. These type of meals, were created to use up left overs and using bread as a filler. Now of course we can make and enjoy! Best, Rik

    Hi Rik, the pan you use at the beginning for melting the butter. What sort of pan is it? Bit unusual shape. Cheers

      Hi Mark, it's pretty heavy-bottomed stainless steel. These pans can be a problem - even the handle heats up. If cooking for any length of time, you must hold the handle with a cloth. Best, Rik

    Methinks someone appreciates their own cooking. Cayenne is a classic pairing with cheese; they're mutually enhancing. Not so sure about inexpensive; cheese in Canada is shockingly expensive unless it's the mass produced commercial variety but like a souffle, it's all about the cheese.
