Easy Southern Corn Fritters - Ultra Crispy & Cheesy!

  • These Cheesy Corn Fritters are lightly fried in healthy oil until perfectly crisp, fluffy, and lightly golden. Learn how to easily make this appetizer or side dish recipe with frozen, fresh, or canned corn, cheddar cheese, and a ton of Southern flavor!

    INGREDIENTS:
    3 cups sweet kernel corn, fresh, previously frozen, or canned
    1 cup flour, gluten-free 1-to-1 blend
    1 tsp. baking powder
    ¼ tsp. paprika
    ¼ tsp. garlic powder
    1- 1 ¼ tsp. salt, to taste
    ¼ tsp. black pepper
    1 Tbsp. sugar, optional
    ⅓ cup cilantro, finely chopped
    2 eggs, whisked
    ⅓ cup milk, cashew or almond milk
    1 cup shredded cheese, cheddar or Monterrey jack
    2-3 Tbsp. avocado oil
    Green onions, optional
    Sour cream*, optional
    INSTRUCTIONS:
    If using previously frozen corn, either rinse it until warm water until thawed or thaw at room temperature. Dab with a paper towel until completely dried.
    Whisk together flour, baking powder, paprika, salt, pepper and sugar in a large bowl.
    Add corn, cilantro, whisked eggs, milk, and cheese.
    Stir until mixture is well combined.
    Add 1 tablespoon of oil to a large stainless steel or cast iron skillet. Heat oil until it begins to sizzle.
    Measure out ~⅓ cup of batter for each fritter.
    Place batter for 4-5 fritters evenly spaced into the skillet. Press each one down lightly with the back of a spatula and cook for 3-4 minutes per side.
    You’ll know the corn fritters are done cooking when they fluff up and turn lightly browned and crispy.
    Serve corn fritters with a dollop of sour cream* or some homemade aioli with a sprinkle of green onions.
    RECIPE NOTES:
    *Use vegan sour cream if vegetarian or dairy-free.

    Yes I definitely won’t be using cilantro LOL, but this is one of the best cooking tutorials I’ve have ever seen on UA-cam. I love how you break everything down, you give us the recipe as we go, you talk slow, you explain everything, not to mention the wonderful quality that your camera provides along with the angle. Outstanding video I found you searching for corn fritters now you have a new subscriber I haven’t even seen another video of years yet, but I definitely look forward to it.Great job keep it up

    I used Oat/Flax milk, corn meal, onions, no eggs just arrowroot, oops. Still not bad at all, Used cajun seasoning, not perfect like yours, but I and grandson loved this with Texas chunky Air Fried (perfect man!)right through small batch. Air Fryer all the way!!

    These are great! It was tough to keep the moist fritter from sticking to the spatula to press down. Maybe my corn was too wet? Mine ended up a bit thick.

    Milk substitutes: cashew & almond milk isn't really milk. There's hardly any almonds, etc to speak of. It's full of additives & preservatives. You're better off using real.milk unless you have an allergy. My granddaughter likes Lactaid.
