Crispy Corn Fritters

  • These deliciously crisp corn fritters are packed with healthy vegetables. You can make them with wheat flour or gluten-free flour as you please. We enjoy the fritters for lunch or supper, and of course they are always welcome during the cocktail hour! Ingredients are listed below:
    Corn Fritters
    Ingredients for 5-6 fritters (depending on size)
    3/4 cup (100g) flour
    1/2 teaspoon baking powder
    A pinch of salt and grinds of black pepper
    1 large egg, beaten
    1/3 cup (80ml) whole milk
    A drizzle of olive oil -- about 1 teaspoon
    1 red bell pepper, diced (reserve a tablespoonful for the dipping sauce)
    2 scallions, thinly sliced
    A handful of chopped fresh parsley (reserve a tablespoonful for the dipping sauce)
    1 (8.75 ounce) can whole kernel corn, drained and patted dry
    For frying:
    The oil of your choice (I used olive oil)
    Dipping Sauce:
    1 cup sour cream
    The grated zest of a lemon
    The juice of half a lemon (a tablespoon or more, to taste)
    The reserved diced red pepper
    The reserved chopped parsley
    Salt and pepper to taste

    In Australia we call the scallions/green onions, 'spring onions'.

    They look very yummy. My mother used to make them when I was a child. Her recipe was similar but she also mixed in a bit of cooked rice.

    Hello from New Mexico 😊🌈 I made these and they were so delish! It also gave me a good opportunity to use up some gf flour we were overzealous in purchasing for our gf flour Christmas cookies. The recipe was not yours and it was an abysmal fail. I probably did something wrong lol. I digress... Anyway, these are great and I doubled the recipe to also have for the next day. To warm up and enjoy again. S-o-o-o-o good! Thankyou Kevin what a yummy recipe and great demo. Thanks for all you do! 👨‍🍳

      Frozen corn will work great here. Run water over the corn to thaw it, then blot dry with a towel. Enjoy!

    I don't have a cast iron skillet. Just have a frying pan and not really non-stick too much anymore. Will the fritters still fry very well in this kind of frying pan? Thank you..

    Kevin, as a diabetic, I can't always follow your recipes and must amend them using things like almond or coconut flour, and keto friendly sugar substitutes like stevia, monkfruits and allulose for recipe substitutions. Corn is not on most diabetics lists, but for "once in awhile" if you don't cheat and if your sugars are low enough.
