The Danish Oil would have to be cured, not just dry, for at least 6 months before Aqua Coat application without any shellac. Penetrating drying oils take a long time to outgas. You can always use a test piece for a trial run.
I used Formby's Tung Oil on a guitar (5+ years ago), it looks good, but I wish I filled the grain, could I use Aqua Coat now to fill the grain and then apply more tung oil?

Stain the wood first, use the filler, then use your topcoat.

What's the purpose of using the seal coat shellac after sanding but prior to grain filler? I'm planning on painting my old oak cabinets.

Would I bother? No, probably not. But if you or the client wanted a glass smooth surface this would work fine before the varnish.

Even though it’s water based, you can finish it with lacquer or polyurethane, oil based finishes?
Yep, as long as it's completely dry you shouldn't have a problem. Always test your finishing regimen on a scrap piece first though.

How important is mixing the wax free shellac 50-50 with denatured alcohol?
Mixing it with alcohol just thins it out a bit so it flows easier.
Can you use your top coat as a sealer over the stain?
Yes, the top coats can be used over stained surfaces, once dried.
What ever happen to "Tack Cloths" to wipe up sanding dust? I don't see many woodworkers using tack cloths...is there a reason for that?
