How-To Make Khoresh-e Fesenjan

  • Khoresh, a generic term for stewed dishes, is a staple of Iranian cuisine. One of our favorites is fesenjan, a walnut and pomegranate stew that has the perfect balance of savory and sweet.
    Farideh Sadeghin, MUNCHIES culinary director, learned how to make fesenjan from her father, the king of khoreshes, and shares his recipe with us in the Test Kitchen. She serves her fesenjan over steamed basmati rice with pomegranate seeds, but if you really want to do it the right way, serve it with tahdig, the layer of crispy browned rice at the bottom of the pot.

    For those wondering, you can tell it's a pro level fesenjoon if there's a thin layer of walnut oil on top when it's done.

      Also shouldn't have grainy consistency and should look alot darker than this.

    Great dish and love the host👍. Had a chance to try this dish in Tehran and it tasted amazing! Taste good with some of the leftover crispy rice as well 🤗

      The host she literally said it looks like diarrhoea how much more disrespectful can you get if you went to iran you would know that this is a very traditional an ancient dish that requires respect

      @@mutantfaith508 For someone with Iranian ancestry I was surprised at how much negative emphasis she made about the looks of the dish. It doesn't look that bad thb, especially for us who have similar-looking dishes in our own national cuisines.

      TheJulianmc Persian and Iranian are the same thing. Persia was the ancient Greek name for Iran and it stuck, but people from there call it Iran or "Eranshahr".

      Justin93koch they’re not exactly the same thing, but often used interchangeably. There’s a long ethnic and linguistic background to each word.

    It needs turmeric and saffron! How can it be Persian without turmeric and saffron! =P
    I tend to grind the nuts a little bit less fine, but that's a really good looking fasenjoon. A well-made fasenjoon is basically one of the best foods on the planet.

      not everything, get saffron to be called Persian,same goes for italian food,you don't have to add garlic or basil to be called Italian !! Saffron mostly goes with tomato based stew,and turmeric mostly used for red meat,specially lamb to get the bad smell out

      It doesn't look bad really.This is a northern iranian dish and the real traditional fesenjan from north looks different..it should have an even consistency and not so grainy like this video..also should have a very dark almost black color(they also add plum mollasses in north which changes the color)..overall the original stew looks good almost like chocolate sause.

    Pro tip my motherinlaw tought me: instead of adding water, slowly add icecubes it will help separate the walnut oil and help with the doodoo look of it 👌👌👌👌

      Good presentation but Horrible and disgusting use of "diarrhea" as an .analogy about this fantastic and traditional food. I am sorry but I would really suggest to delete or change this video. Totally insensitive and offensive. I am cooking this dish right now and this woman just about ruined this.

    It does not look bad at all, especially in the end. It looks like molten chocolate. I tried it once at a nice persian restaurant, it was love at first taste, i did not know what it was.

    Excellent job, great recipe, and I think it looks divine, not bad at all, but hey, to each their own right. The smells are amazing and the taste is really unique an incredible. Can be a tad sour for some, so add in a pinch of sugar to balance and also a pinch of cinnamon is so nice. Lastly, don't forget to add in SAFFRON and water, as this really adds to this dish.... Great job. Also love the well-used dutch oven you got there. Nice. ;-)

    yeah, let's get a show with Farideh and find out about her origins and what's made her her...she's really easy to watch, makes you smile/laugh and that sass...she so sassy and cheeky...it's refreshing! If she's from Iran then I'm guessing she could teach us all quite a bit about good food...and maybe a bit about Iran too...people could do with being educated more on that region!

    Yo, can you make Persian/Afghan Spicy chicken soup. It's like diced chicken breast, and you put it on rice. It's spicy and looks almost like tomato soup with chicken in it. It's really good, my friends mom used to make it, and I wanna know the recipe. Thanks G
