12.31.2022▪️I just made my beans following most of your directions and they came out great ▪️My pot doesn't have a bean button so I cooked mine for 35 minutes . I also added a cut up white potato to give it a little texture and a little water. I only had a small amount of neck bones and they came out perfect.

7:00 BONES... that's why I prefer smoked ham hocks... the neck bones can drop a lot of little bones in the beans sometimes and they can'...hide from you , it ain't fun finding one in a bite of beans.

I have 4 instant pots and yes you can sub the smoked neckbones with ham hocks, smoked turkey wings or smoked turkey tails. Cook for 25 minutes. You can use any of these meats in your collard greens too. Also cook for 25 minutes. No trio with the greens only an onion and that's optional.
I have not cooked soaked beans in the instant pot before, but here is what I found on the internet: Soak the beans in plenty of cold water to cover for 8 hours (or overnight). Drain and rinse the beans. Select the Pressure Cook (Manual) setting at high pressure and set the cook time to 8 minutes. If you did not soak your beans, set the cook time to 30 minutes. Hope that works.
Can’t do bell pepper, (highly allergic to it.) I’m from Alabama, and I’ve never, ever, ever, ever, ever heard of anybody using celery in black-eyed peas.
I’m telling you ~ its so frustrating that not one cook using this machine (that I have found ) shows hot to turn that damn thing on!!!!! I’m sitting her trying to turn it on and it is just sitting there not doing anything but lights are on;/

I'd say about 10 minutes but I'd recommend to boil your neck bones 1st.

I’ve never had anyone season food after it’s cooked rather than seasoning the water it’ll cook in….. 😒
True, I usually season before too however not knowing how much seasoning was use when the meat was smoked, didn't want to chance of too much salt.
