    1 Yam 3-4 lbs
    1 cup salted cod (prepared)
    1/2 onion
    1 tablespoon chopped parsley
    2 cloves garlic
    2 tablespoon olive oil
    4 sprigs thyme
    10 cherry tomatoes (or 1 large)
    1 scotch bonnet pepper (optional)
    1/4 teaspoon black pepper
    1 scallion

    Wow! This is a native West African dish!
    Only difference is that we don't use tomatoes and use African chillies.
    Happy to see that our good food continues to thrive in the Caribbean after so long. ☺️

      do you know the name of the yam by chance? I believe it's imported from West Africa.

      very similar to a portuguese dish called bacalhau as well. Except its made with potatoes and has olives added.

    That's a really nice dish, I had the salt fish in many didn't recipes when I was in Jamaica. I am really enjoying the recipes, before you know it I'll be able to cook a lot of the meals I loved so much.

    Hi, Chris; I'm one of your subs. Love your cooking appreciate your energy and enthusiasm in your videos. How do I find this particular Yam? I like Yam, one particular, we call "Yame blanco," in Spanish. There's a few of them around my area which look the same, so it's not easy to know the difference.

    I'm from Ghana West Africa and call this yam 'puna yam' cocoyam is what Caribbeans call eddoes it has more if off white/ purple ish colour

      rhoda williams I could never tell the difference. Cos I'm Ga so it's not our specialty. I can definitely tell the difference between a good or bad kenkey and banku. Lol

    That yam keeps for months in the freezer. Just peel and put in
    Plastic. And freeze until needed.

    This dish is the more exciting cousin of the boring Newfoundland salt fish and potatoes. They only use fried onions and fried crispy pork bits. I freaked everyone out when I decided to go rogue and used real bacon pieces....oh the horror.
    But seriously, I think I would like to try this version on my West African husband.
