I like Yam, one particular, we call "Yame blanco," in Spanish. There's a few of them around my area which look the same, so it's not easy to know the difference.
This dish is the more exciting cousin of the boring Newfoundland salt fish and potatoes. They only use fried onions and fried crispy pork bits. I freaked everyone out when I decided to go rogue and used real bacon pieces....oh the horror. But seriously, I think I would like to try this version on my West African husband.

That yam keeps for months in the freezer. Just peel and put in
Plastic. And freeze until needed.
I'm from Ghana West Africa and call this yam 'puna yam' cocoyam is what Caribbeans call eddoes it has more if off white/ purple ish colour
