The stark difference you can see here is it's more hyginic compare to rest of India. No one is putting their whole hand inside food, the streets are clean and not filled with trash, and foods are well protected from flies and insects. Also people are much friendly and has no intention of scamming you as a foreigner. I would suggest you to explore more North-Eastern state.
I have faced more scammers in nagaland and meghlaya compared to other north eastern and himalayan states(uttrakhand, himachal,nepal and sikkim) and please dont let me start on the hygiene, just because he visited to a little decent happening place dont make the other actual street vendors in guwahati hygiene. grow up

Also most of the scammers here in NE are either illegal immigrants or non native people! Same with street vendors. Basically in Assamese tradition there is no concept of street foods culture. The vendors you see are mostly brought from other ethenic cultural people migrated to North East from various parts of the country. We Assamese,Bodo and various tribes mostly have sweets and deserts and meats that also supose to be eaten during festival seasons in old times. Time changed so the foods and people got modernised and eating habits and choices.
Assam people are the best of all. Polite humble kind and very helpful. I traveled all around India.. the one common thing i heard all around is people of assam people are very sweet and kind hearted ❤

Guwahati is like cosmopolitan, if you want to see real assamese culture & cusine you have to visit the nearby tribal villages...NE is hub of more than 100's of tribes & have their own ethenic beliefs & food habits , tradition...its comletely different from rest of India & quite similar to southeast asian countries... The landscape is also similar to Thailand, vietnam or cambodia... Some high altitude places are like tibetan regions...
