Rhubarb Royale

40 ml gin
40 ml rhubarb syrup
20 ml lemon juice
Top with Prosecco
Syrup: boil together 1 cup sugar and 1 cup water with a few stalks of chopped rhubarb for 5 minutes then sieve out rhubarb and boil for another 5 minutes to thicken
