I loved this video! It was so interesting to see the process of preserving the way they do it there in Latvia. Here in the US, we probably wouldn’t consider this safe because of the oil, and maybe not enough vinegar. Also, were the jar lids not screwed down while processing? And the water did not cover the jars? I’m sure this has been the practice there for many years, I just wonder how it all works? I have to say, this was one of the most beautifully filmed and edited videos I think I’ve ever seen! You did a tremendous job on it, well done! More like this!

How long did you water bath those jarss?
It’s put into the jars hot and then covered with a blanket overnight. If we water bath it’s usually until 85c for 15 minutes.
