The sharpness and hardness this knife depend on tempered and queching the material and hopes could be formed martensitic crystallization on cutting edge.He is very clever in this processing,how can be he guess temperature is needed for quenching the blade just only seen the colors of glowed steel ..before dipping it.

Cleaver is nice. I just don't understand why he made it hard to himself to straighten the end curved part of that lift spring. He could have just cut it or just used flat portion of it. Didn't think about it.
He is without doubt one of the best blacksmiths on UA-cam. However as someone who was a successful chef for over 20 years it’s the wrong shape. In order to cleave you need the weight and mass at the front. "Cleaving" is separating by cutting through the joints, such as the backbone, of an animal which requires accuracy you wouldn't get with this knife. It’s a brilliant one handed, single blade mezzaluna though.

Why would you need to straighten out the end of the spring? Seems to me the other end could have been used.
Straightening it before cutting is easier than cutting then straighten the end. The whole spring will be used for different knives.
