Just discovered this excellent channel and just subscribed. I note that when you were harvesting the bok choy, you pulled the whole plant out, including the roots. So, after harvesting, it's done!? It won't "re-grow" again like lettuce?
You are rgiht. In the past year we only collected leaves that we need or cut it by the roots to regrow but we are now collecting them as a one time crop cause i have to make room for the potatoes.
Thank you for your video very much. I once lived in Atlanta in 1970. I now live near Huntsville Alabama Zone 7B I want to grow Pak Choy/ Bok Choy. I can plant some seeds in the ground now but not sure. It gets hot here just like Atlanta. Could I plant seeds directly into the ground? I don't have a greenhouse. Thank you again.
I have seen them in International Markets or go to asiangardentotable and she has a lot of seeds that are more heat tolerant. She also has UA-cam videos

when to plant for fall? We had some grow over winter and it did well.
Fall would be best and next would be srping

Zone 5 to 6 Chicago my choy Sum is doing well start in April.
I have not tried Choy sum before and will do soon. Hope your harvest was good
