How to make Italian Pizza Rossa

In this little movie, we make one of my favorites: an authentic Italian thin-style Pizza Rossa. Crispy, oily, light, and a joy to eat. This reminds me of my childhood and school time. We used to have a shop right off my school, it was a small bakery (alimentari or forno at the time) where they used to sell these awesome little pizzette rosse - pizza in red sauce. I still miss it, so I tried to replicate it and, I got extremely close. Let's bake it together.
Ingredients:
For the Biga:
400 g 00 Flour
200 g Water
1 g Dry Yeast
For the main dough:
all the biga
120 g Water
1 g Dry Yeast
10 g salt
20 g Olive Oil
5 g Diastatic Malt (or sugar)
Dough weight for your pan formula: pan width x pan length x 0.30

I searched high and low for years after studying abroad in Rome, for the right dough recipe to match the life changing pizza al taglio i got from a little hole in the wall shop around the corner from my school as well right by the Piazza del Popolo. To have clear containers, make sure there is enough salt in the saltdispenser of your dishwasher. Salt dissolves better than minerals in tapwater, when treated with salt, those minerals won't get the chance to cloud your containers.
3-in-1-tabs won't do the trick. Use rinse aid and use the cheapest kind of tabs without that 3-in-1 crap. Preferably those kinds without dissolvable wraps.
Or wash by hand, like I do with glasses and clear containers 😊

@MileZeroKitchen: to get rid of the small and dried water droplets on you glas and plastic, add some rinse aid/rinse agent into your dishwasher. there should be a special flap for it.
this stuff breaks the surface tention of the water during the rinse cycle at the end and doesnt allow water droplets to form on your glas and plastic.

@@MileZeroKitchen yes, its a liquid you pour into a reservoir of your dishwasher and top of every couple of weeks. the dishwasher only uses a couple of ml per use. check your dishwashers manual. tbh idk if this is something devices in the states have, but its a normal thing in european models

As for your question about the stains, a vinegar rinse might help! Occasionally run an empty cycle with a cup of vinegar to remove buildup. It works wonders-I got that tip from my mom 😉!!

For your cloudy dishes from the dishwasher, buy some Lemishine and run it through your dishwasher a couple of times. Also buy Jet Dry or similar and use that regularly for shiny glasses.

My area (Salt Lake) has super hard water. When my kitchen got a dishwasher many years ago, my first loads had cloudy stuff too..I was so disappointed! However..a big splash of white vinegar added to the dishes compartment after the washer first starts, drains a second, then starts adding water is the key. In case that’s confusing at all, the washers always drain whatever excess is in the works, then start filling up, so don’t add it so it will just get sucked out, only add it when the washer starts filling. Usually I’ll make sure the tap is already very hot so the first water it pulls is also hot. Just a splash of vinegar will give you sparkling dishes/glasses..

Another delicious recipe! I’ve made this one (I’ve made many of your recipes and yours are always unbelievable!) and got the two thumbs up from my friends in Jacksonville via Milano!!! How do you feel about leaving the dough in the fridge for a couple of days to develop more flavor? And try “phosphate free” dishwasher detergent for your issue. I’ve read that that’s the fix and it’s what we’ve been using for years to eliminate that hazing/cloudiness problem:)

How come no salt on the sauce?
The tomato sauce is naturally savory and sweet at the same time, but if your sauce/taste require salt, just add it!
Maybe the problem of the dishwasher is the salt. You have to add more salt. The steam will disappear during the final process thanks to the salt that absorbs it.
My mom told me that , i tried to add it and it worked. Ti scriverei in italiano, non so perché ti ho scritto in inglese però vabbè hahahaha. Spero ti sia di aiuto. Ti stimo, continua così.✨

Another top notch video thanks for inspiring and educating us :) could you clarify sonething regarding bulk fermentation? In this video during bulk fermentation dough doubled in size, should this rule be applied for all dough products? Example for Neapolitan pizza bulk is usually short (dough will not double) and final proofing time is longer to compensate, whilst for bread dough bulk fermentation will last till double and proofing is shorter, is this accurate or am i missing something? It all depends on your environment, ie: temperature and humidity in the air. If you have it a room temperature around 21 degrees celsius it should take about 2 hours. But again its all about the environment.
Wonderful! If only this could be made in a few hours (sorta like your 'SAME DAY NO-KNEAD Detroit-Style Pizza'), but perfection can't be rushed. Is this similar to Gabriele Bonci's crust?

hey bro been loving your videos. but i copied your recipe yesterday and my dough was so sticky i couldnt even form balls without tearing the crap out of it. any advice
Sounds like you didn’t develop the gluten well enough. Try leaving the dough in the mixer for longer. Try with more stretch and folds, always wet your hands: this is a very high hydrated dough. Also, could be a flour issue, some flours can’t really absorb all that water, maybe try with a partial autolyse.
