    Thank you so much for watching, I truly appreciate it. TBarbacoa de res recipe:
    2 - 3 lbs of beef roast
    4 guajillo chili pods
    4 garlic cloves
    1 bay leaf
    2 roma tomatoes
    1/4 onion
    2 tsp oregano
    1/2 tsp cumin
    1 tsp thyme
    1 lime
    Season salt to taste
    Start off by boiling the guajillo chili pods to soften them. Add all the salsa ingredients into a blender along with a little water from the boiled chilies. Puree the ingredients, if you need more liquids add as you need.
    Place your beef and salsa in the instant pot. Set to pressure cook setting “more”, and set the time for 25 mins per pound.
    Shred your beef and add some of the juice back into the beef.
    Season with salt to taste
    Enjoy!

    The best advice from this video, Is there unplugging and letting the steam vent naturally in lieu of pushing the vent right away and making a mess , this is what deters me from using the instapot , wow thanks ! And going to do this recipe,thanks again

      Yes it would make a mess if done right away. I've made many messes when I first started using the instant pot. But I love making meals with it, set it and forget it cooking

    Today is May 10 and this is my second time cooking this recipe and I like to use Chuck Roast meat and my daughter and granddaughter loved it , thank you young man , i have 5 grandsons all adults and I wish they know how to cook like you ! GOD bless you and thanks again for your recipes !

    Thanks for the receipe! I have an instant pot and didn't know I can make barbacoa in it. My Mexican mother made her signature sauce she's made for 30 years and that's what we used, she marinades the meat on it overnight, but followed the rest of you receipe and it came out divine! 💖🙏🏻😍
    We eat the broth (consommé) with lime, chopped onions and cilantro, and crushed chile de arbol salsa along with the tacos 🤤🤤

    I use beef cheeks in my instant pot but I cut off a lot of the fat beforehand and only use 3/4 cup of beef broth. I also cook for 2hrs with natural release. It's still a bit wet like an overcooked pot roast but if you drain it and saute the meat afterwards I think it's perfect. I also braise the meat before pressure cooking and I cook it South Texas style so it only has salt and pepper and that's it.

    Thank you! I have 3lbs in my fridge and I was wondering how to do it other than a regular pot roast. I wanted something Mexicanish (soy mexicana) and spicy!! I’ll be making it with chile de árbol and guajillo.

    Thank you for adding that it’s not spicy. I like spice but not everyone does. But Chile flavors are also good enough for me so I want some type of spice flavor. I also couldn’t remember which Chile’s aren’t spicy. Don’t really use guajillo like that. So thank you!!!

    Awesome Kirby! I really love how an Instant Pot tenderizes roasts. I freeze the leftover broth for the next roast by adding different spices to it makes an entire new meal! Fantastic Barbacoa Kirby!

      the tacos were really yummy Joe. That broth has a lot of flavor. I use it with left overs or add a couple scoops to a dish. It add a nice flavor to what you are cooking. Thanks brotha, hope your having a great weekend.

    This looks great im fixing to give it a try. All I could find is new Mexico chilies hopefully they will be ok. Also wondering if this would make a good filling for tamales. I'd like to try my hand at those sometime.... keep those good recipes coming. I have my fat pants on...

      Be careful with New Mexico chili, those can be spicy. If you used a lot, it will pack a punch. I use like 1 or 2 with 4 California or guajillo chili's. Yes this can be used for tamales. The recipe is very similar. I hope you enjoy it, its got some really good flavor.

      Add some chile de arbols, those will give it a nice kick. I usually dont add the spicy stuff because of my kids. That is why I always have a good salsa on hand.

      It sure can, that juice is packed with flavor Jessica. You can add ingredients also, it doesn't hurt to experiment. I usually dip it, but that would be an awesome base for a stew.

      Hi Dahling, birria doesn't have tomato in it. Honestly the first time I tried birria tacos, I thought it was just barbacoa. It's a trend, I know. I grew up on birria made with lamb or goat. but birria made with beef is common in the states. but the difference is barbacoa has tomato and birria doesnt.

      @@CookingwithKirby ~ Your recipe for Barbacoa, is not what I have seen in Tex-Mex (the Valley) cooking but, maybe I have been calling it by the name Birra. Tex-Mex barbacoa is meat (beef tongue and cheek), salt, black pepper, garlic and sometimes but not always a couple of bay leaves. What area would you say this recipe is from? I am always very interested in how a recipe progresses just a few miles down the road. Your version looks amazing and I look forward to trying it.

    You needed to do was dip that taco into the broth first then bite or dip the whole tortilla in the broth then throw it on the comal and make your taco. I'm just jealous bro, great video and cook!

      Chipotle peppers i usually use in combination with ancho chiles and guajillo. I usually make an adobo sauce with it. I usualy put that on chicken or pork.

    Barbacoa is always made from beef cheeks never a roast

      traditionally barbacoa is made of goat or lamb. Barbacoa is not just one piece of cut either, its the whole animal. They use beef in the US, so a roast will do just fine.

      As an actual Mexican, I've never made or heard of any other Mexicans make barbacoa using beef cheeks............ very odd..... don't know where that misconception came from.

      @@robotbeararms this white lady has lived her whole life in the mexican capital of the united states where we dont say cumin , its comino and we have the only restaurant that is allowed to do traditional beef barbacoa. By putting the head in the ground covered with coals

      @@em478w northern states in mexico use the whole head and since that is not available in restaurant anymore beef cheeks are the go to in Texas along with lengua
