French Onion Soup Recipe:
Ingredients:
3 tablespoons unsalted butter
3 to 4 large onions (red or yellow), peeled and thinly sliced
¾ teaspoon kosher salt, plus more to taste
2 quarts beef stock
1 cup dry white wine
1 tablespoon dry sherry
1 tablespoon all-purpose flour
½ teaspoon black pepper, plus more to taste
8 to 12 slices French bread, toasted
1½ cups grated Gruyère cheese
Instructions:
1. Melt butter in a Dutch oven over medium heat. Add onions and salt, cover for 5 minutes, then caramelize slowly. The caramelization process will take about 40-60 minutes. Be careful to not burn the onions.
2. Warm the beef stock in a separate pan.
3. Add wine and sherry to caramelized onions, then stir in flour.
4. Gradually add the warm stock, salt, and pepper. Boil uncovered for 10 minutes.
5. Place soup in ovenproof casseroles, top with toasted bread slices, and sprinkle with Gruyère.
6. Broil until the cheese is bubbly and golden. Serve hot.
