Otak Otak Ikan Tenggiri - Grilled Fish Cakes

    It's convenient to purchase ready-made 'otak otak' to feed the family. However, cooking it at home gives you the advantages to choose the type of fish and control the spicy level of the dish. Most importantly, you can avoid the usage of artificial flavouring found in these types of processed foods. The Otak-Otak can be grilled or steamed and both methods are as delicious.
    Note: This dish can be kept in the freezer for a few weeks to a month.
    Otak Otak Ikan Tenggiri - Grilled Fish Cakes
    Ingredients:
    300g Fish fillets (Ikan Tenggiri/ Mackerel)

    2 fresh red chilli
    1 knob of ginger

    3 Kaffir lime leaves
    1 tsp of dried shrimp paste (Belacan)

    Hai Somjit.. Recipe ini siapah ajar pada kamu.. Bagus dan lengkap dari lain Chef.. Bahan rempah dan cabai paste cukup rasa yah.. Kamu menang kerana jamu sudah bubuh Air asam jawa, dan belachen goreng, lain daun pisang tak paya beli, bukit saya banyak ya.. Ia itu daun pisang hutan ,jija kamu bakar lebih wangi dan harum.. Yes, use banana leaf to grill this kind of food it help to enhance to flavor and the lovely fragrant. However, banana leaf is quite hard to find now a day and it is quite expensive.     I am allergic to eggs, can I omit egg or is there any substitute for eggs?

    I would fry the "rempah" until oil separates first blending it into the fish.

    I am in New Zealand, pretty hard to find banana leaves, is there any substitute for banana leaves?

      Hi SK, Thank you for your comment. We can use any eatable leafy vegetable like Kailan, sweet basil etc.. however pls have the tinfoil wrap over it to prevent leakage. Can look out for similar wrap in my other video "Ikan Pari Bakar Sambal - Grilled Stringray with Chilli Paste".
      If use sweet basil will give a better fragrant to the otak otak. :)

    Jika kamu guna isi ikan tidak di lupai, otak otak kamu pasti kena jual rm 100 sekeping.. Ok.. Gd try Somjit. ! ( Ikan yg brrnama Tidak Dilupai sekg Rm 1700 yg saya selalu jual ke Restaurant yg taraf tinggi) jika senang, saya belanja Somjit dua ekor.. Ok. !

      Hi Toby Wearnes, thank you for the comment 😀 I've not come across very chewy otak-otak before, so I'm not too sure on how to make it more chewy. However, if you would like to replicate the similar texture as from the gerai, I think more flour can be added 😀 I hope it helps 😀
