I don’t find Pailin as a talkative woman but a very good chef who knows what she’s doing. I like her energy so I’ve been following her since 2015. I’ve tried some of her recipes; they’re good.
I'm one of those people that says such things but some can talk "more" and are quite engagng. I believe she fits into this criteria. Most of everything she is saying is about the food while others that talk too much (including me ;]) do not stick to the subject. Great video.
This was PERFECTLY explained. To the point and perfect time in between for me to add all of the ingredients/directions in my phone as I watched these videos on my computer! I am half Thai and my family loves this! I haven't been able to perfect boat noodle soup so I feel this video has given me all the extra tips I needed to know to make it authentic! Thank you !!!

Just tried making this, and it tasted delicious! Could not find some of the Thai sauces, so had to substitute with other ingredients, but once the bowl of noodles was put together, topped with fried garlic and vinegar chili, it was so yummy. Thanks for the recipe!

That looks delish!! A trick I do to remove fat floating atop broths, soups, etc, is to hold the stem of a leaf of plain iceberg lettuce into the stock. Let it float around atop, holding the stem so you don's lose it, and it soaks up the fat or grease. It sticks to the leaf!! Take out and discard. You may have to use 2 leaves or more depending on how fatty the stock is, and how much oil is floating on top. It always works for me! xo

They will just tell you what to put in the pot and how long to cook for, then hope for the best that the people who never tasted it get it right, since you can’t know what the taste and flavour should be by looking at something. Maybe those videos would be suited better for your liking. -She’s trying to educate people of what she had learned which would enable them to create their own dishes in the future. That’s why she created this channel in the first place, as well as publishing her cookbook.
She doesn't just say put this and this and this into the pot. She explains how the ingredients should interact and the goal you're trying to reach. That's _cooking._ Especially if you're making a dish you've never eaten, you need to understand how it should come out. These Asian soups are masterpieces of subtlety. Pai is a perfect teacher who can help you get to the next level. She's a treasure and if you think she talks too much then go watch videos that stress how it's the simple, easy, no-fuss quick version of whatever and enjoy your mediocre life.
This one of my favorite soups. It is an AMAZING soup. Now I know why. So many wonderful, exotic and good-for-you ingredients! Well, at least it balances out :) You were a deligh to watch.

Just curious why you didn't parboil the bones as one would do when making pho? Isn't the concept the same where parboiling helps remove the impurities and you actually have very little flavor in the water at that point?
I think there's two reasons why: 1.) pho broth is ideally very clear. You wouldn't want the impurities of the blood in the bones to darken the broth whereas boat noodles is already darker in color from the seasonings and the blood that will be added later on. And 2.) I believe that pork gives off a cleaner broth compared to beef bones, which then makes parboiling not necessary.
I want to make a 20 serving version of the recipe. Should I just x4 or what do you recommend for a giant pot? I tried the 4 serving recipe and it was delicious. I'm just unsure about translating the recipe to a party size pot. I need to serve at least 20 people. Please help. Thank you.

I love to eat this when I was a kid. Thx for the recipe. Can you do a recipe on intestine soup. Idk what is call but I remember trying it when I was a kid and I was in love with the taste. I can't seen to find it anywhere on the web or my local Thai restaurants. It has all the different kind of meat in it, I remember it has sweet soy sauce egg, pork blood, and so on. I think I believe is call "Ket Chet".

davidpaw22 You're trying to get out the blood and impurities. To make up the lost of flavors you just cook the bones longer. Your stock will taste 10 times better.
You can do that too if you want a clear broth noodle soup. They sell it everywhere in Thailand. But this noodle soup has its character that’s it’s not clear and more aromatic.

what if i change white pepper corn with black pepper is it okay ?
It's fine. I think black may be a tiny bit hotter in taste, but honestly, it's so close, I doubt you could tell.

Is pork bones the authentic way? Why wouldn’t it be called Pork Noodle Soup? Just curious, either way that looks bomb.
Mostly, we can find both pork noodle & beef noodle in the same restuarant, shop.

I would've done a quick high boil. Dump out all that dirty water. Wash the bones. Then reboil using clean water...
Why would you do that. You are creating a stock. A pork stock. If you dump it all out, all the flavor will be gone. And wash the bone?
