    Hi from the states to My BBQ brother from down under! I bought a Webber kettle grill and used your channel to learn to slow cook my beef cuts. I retired my 20yr old grill I call ole rusty and debated on what to replace it with and you helped me in that decision. Everyone is buying crazy expensive grills and pits these days. The most expensive grill I've ever owned cost $250 "ole rusty". My friends and family have always loved my BBQ slow cooked meats for decades. I love how you have shown everyone that an inexpensive grill and a few simple methods can produce some of the best BBQ that money can buy. Don't lose that simple philosophy brother. Love your beef and chicken videos! I just don't do pork...

    you always read my mind, whenever i'm thinking of a good video tutorial to check out you happen to upload it! I got some mediocre beef short ribs yesterday and they just don't do them right here like they do in america. They're tiny, with tiny amounts of meat on it. I happened to use my kettle bbq to smoke them though and my own efforts made them turn out well. I used the snake method though, so i'm gunna give my slow and sear baskets a go next time like what you showed and try (with some luck) find decent, wagyu preferably, beef short ribs.

    I’ve noticed you use olive pip briquettes. I’m looking for a fuel with minimal flavour impacting the cook, is there a strong flavour from them?

    Will never cook ribs again without wrapping them @165oC. These came out of the Weber and the bark was tough as boots....

    They look great mate 👌🏻 Quick question, whenever I do beef ribs I do the same method as you, however my ribs always are thinner down one end, yours always seem to be a uniform size throughout when looking at the cross section, would this be because I am using a cheaper beef rib or something to do with the trimming I’m doing? Hope that makes sense

      Hey mate, always try trim your ribs in a uniform way. However sometimes it's just the way they come. Definitely try source some better quality ribs too as they'll be cut properly.

    I have a JG offset plate. Can I use that instead? If so would I need to add a foil tray with boiling water?

    Do you find kettle-smoked ribs having noticeably less smokey flavor than offset-smoked ribs? Or are they pretty close?

    Does it seem a bit expensive to use that much chargoal for only that small amount of meat?

      Can always use less and finish in oven
