BEEF SHORT RIBS - SMOKED ON THE WEBER 22 | BBQ iT

    Isn't it time you learned to smoke some beef short ribs? Are you locked down at the crib, busy social distancing during this sad situation? Well, it's time to get cooking outside folks!! It's always BBQ iT season here in New England, we NEVER put away our grills. It's truly a year-round sport for us!! So, you've wanted to tackle the long cook for a while. Well, this smoke is an easy job, and it has some of the best rewards you'll ever taste!! I finished mine up in some softshell tacos, but you can do just about anything with this amazing product.
    Recipe:
    -SALT brine overnight, up to 24hrs
    -bring to room temp
    -apply fresh cracked black pepper
    -set up kettle or cooker for indirect smoking..aka hot zone/cool zone
    -once the pit is at around 250-256, add your wood
    -smoke 3-4hrs, depending on color and preference
    -spritz w juices of choice every 30 min
    -once approx 165 ish internal, and right color, wrap in pan or foil
    -return to heat until probe-tender, (usually around 208-210, but can be earlier)
    -rest WRAPPED STILL, for at least 1 hr (best to wrap in towel, rest in a cooler)
    -remove meat from bone, and fat bottom cap, then serve as desired

    Great vid. I watch a lot of the popular Q channels on UA-cam. I like yours when you feature the Weber’s. That is what us peasants have-not Lang’s and crazy stuff. You balance the pace of your videos too. Fun, not too slow, but also help cover techniques. Keep it up. I bought some B&B at my local Ace and really liked using it in my WSM.

      I'm also a big fan of the B&B competition oak briquettes! During late spring and summer Walmart has really killer sales pricing on the 17.6 lb bags, and if you order enough bags it's free shipping. I do however like to support my local Ace Hardware stores, they just have an old fashioned "mom and pops" feel to them you don't get with the big box stores.

    Love the dry brine for beef, total game changer. I've done up to a 21 day dry age in the fridge, just with a bed of salt, and it works amazing. A day or two is enough to really make the flavors concentrate though.

    for bbqs I would suggest getting a coffee/spice grinder for like $15 on Amazon. throw in all your whole spices and shake for like 5s. Spices are ground in seconds! And mine's lasted for like 5 years. I had one of those tiny battery pepper grinders and it died in a year or so!

    Tip for slicing off the fat cap.. Press it on the cutting board with the fat side down and slide a filet knife underneath. If the knife is properly Sharp, and the ribs are cold, you should be able to slice it off quickly without losing any or VERY little of the meat.

    A little secret. Check out the "unicorn" pepper mill. I've had fancy ones, electric ones, ones that I've hooked up to my cordless drill, and the unicorn outgrinds them all. It's an amazing product!

    As a subscriber and someone that's looking to get into UA-cam I've got 2 questions for you... First, what video editing software do you use, and do you edit your own videos? Doesn't matter, I still can't wrap my head around editing yet lol... She was cool enough to buy me a Canon M50 at least... So she does have at least some misguided faith in me.. Haha.

    Nice shorties. I’d ditch the tool hook attachment for low and slow. It prevents the lid from sealing well and I noticed your top vent was nearly shut, which I presume was because your temps were high.

    I have a question, I asked it on your Twitter account but I don't think it was you that answered (guy in these videos haha). I'm a gasser as you say! My gas grill is on the way out and I'm gonna get a kettle. I'm looking at the performer deluxe for the gas lighting, is it worth it? Is it that much more convenient? Second thought, if it only saves a couple minutes and it's one more thing to maintain should I go premium? I like the metal top for prepping space and work room but then I think the bin that comes to keep charcoal in isn't realistic to expect to keep coal in is it? No top, coal will get wet right? So then I was thinking buy a 26" and a nice prep table with cabinets. But the 26 doesn't seem to have some accessories that the 22s do. Do I really need a sear grate or all the other stuff? I mean I could go grill grates for better searing right? Opinions wanted. There are so many ways to go. I grill alot and I also have a smoker. Love ribs and wings the most. 2 racks is the most I do. Besides Christmas or Thanksgiving I don't do big groups like 10+. So do I even need to think 26"? I've spent the last 20 years with a weber skyline series genesis so you may understand why I'm debating so much. Thanks, I found your channel through all my searches and enjoy it !

      Good stuff Andy. I would say, I LOVE MY PERFORMERS! Grabbing a chimney, loading it, and dropping it on that burner is priceless! Coals get lit soooo fast. And yes, the new tabletops are amazing as well. The bin is for just a small bag of coals. I fill mine with different bags of chunks and chips of wood. Now, the 26 is the shit. The real estate difference is a HUGE difference, but never too big. And if I was alone, I would still own a 26r. You can get basically anything for that size as you can for the 22. I even have an ARTFLAME I haven't shown yet, for the 26r. But, the 22 performer Delux, wth a rotisserie attachment added, is the extreme bang for the buck!! Man, it's endless what you can do with it. You can beer can a turkey using the ring, or spin one on it! And you can buy used grills like crazy online. I have about 25-30 Webers, only 2 were ever bought new, and they were open box RED anniversary ones you see in my earlier videos. Le time know what ya get!!! And thanks for watching bro!!

      @@BBQiT I got the performer deluxe. I've been cooking on a lil smokey that I forgot I had in the stable. I debated between performer deluxe and 26r. Ultimately I went with the performer all in one package after looking at buying or building a table or prep area. I love your channel brotha! It helped me alot and you are the most entertaining to watch. Thanks for responding to my comment your info helped me decide. I had to order from home depot and ship to home free. They were the only ones the would. Nobody has these in stock and I looked for and looked for a used No dice. Plenty of premiums tho. Thx man
