Delicious Palak Paneer Kofta Recipe - Inspired By Chef Vikas Khanna's Restaurant!

  • This is my take on Palak Paneer Kofta; a dish I had at Vikas Khanna's restaurant Junoon during my first visit in 2018.
    I decided to try both meat and vegetarian dishes there. I have had Palak Paneer or Saag Paneer quite a lot before, but they had a dish called Palak Paneer Kofta which I did want to try.
    This recipe is a home version of the dish, relinquishing the fancy decorations atop the plate. However, after multiple iterations I think I have come close to what I had at Junoon back in 2018.
    The koftas are made from Paneer, Potatoes and some nuts with some spices that are deep fried.
    Then the palak gravy is cooked by blanching spinach and then cooking it in a onion and tomato masala. It all comes together on the plate beautifully at the end.
    I like enjoying this with some Roti usually or just plain.
