They only sound different due to,
Number of cylinders.
Displacement of the cylinders.
Type of intake system.
Type of muffler or lack of muffler, exhaust.
Turbo or non-turbo.
Blower or no blower.
Two stroke or four stroke and that is the biggest difference in the sound.

you can run a engine without coolant for a certain period of time without causing any damage, when doing in depth repairs on either of my trucks i will start the engines without coolant along the way to insure that everything works as it should throughout the repair process

Running a water-cooled engine without coolant, even for a short time, always scares the out of me!
I know you can do it (for a short time) without damage - but still! I’ve had a car with a damaged head gasket, and it didn’t take long *at all* for it to get hot!
