A nice winter salad in Italy is sliced fennel (tossed in a bit of olive oil), sliced oranges and toasted walnut pieces. Yum!

I canned oranges...a couple years ago I think, during 'Canuary'. These sound even more super-duper! And, ta-da, I might just put some of my home dehydrated ginger in there. I do make tea out of dehydrated orange slices, dehydrated ginger, and honey. Not really 'tea', but a hot 'make me feel better/warmer' beverage. Thanks Leisa for bringing us this wonderful idea!

@@thefookster6826 You know, I find so many uses for the ginger I dehydrate. We had a bad frost here in NY state in May, and it pretty much wiped out the apples and all other fruit. But I had about 30 pumpkins so I made pumpkin butter instead of apple sauce. WOW! the fresh ginger in that turned that into a 'must have'. SO good! I also give it to people at Christmas. I use the Ball pumpkin butter freezer recipe, but don't freeze it in jars, I put it in baggies, and put the baggies in a freezer bag.

With the dark colored honey, I found the oranges to be less attractive. I do think they would look good on the top and sides of home canned cranberry sauce.

Will be using this without boiling 15 in water opting to just boil in the sugar honey mixture for 40 mins prior to water bathing. Love the idea of using in teas and baking as well as salads.
