    I watched this video for 2 reasons 1. I had some extra mushrooms and wanted to can them up.
    2. To save a TON of time chop/slicing them I have a heavy-duty metal egg slicer that I use to slice mushrooms. I believe my husband bought it on Amazon about 5 yrs ago. It saves me so much time! For the volume of "shrooms" you can, I highly recommend that you get one. Thank you for all your videos. I'm 53, and I've learned so much from you. And I'm teaching my sister, 59, how to can. We are having so much fun learning together. Again, thank you so much.

    Well, I caved, CAVED I tell you! I have 3 boxes of mushrooms straight from the shroom farm that just arrived. Bet you can't guess what I'm doing tomorrow! You have completely corrupted me...

    Just an FYI - It's not actually dirt - it is sterile planting medium which is why it is okay to just brush your mushrooms to clean them for cooking (I do give a brief rinse to get a surface clean). I get why you do it the way you do! I wouldn't brush 10 pounds of mushrooms LoL and they certainly don't absorb water the way people used to think they did if you do wash them. I love this video, never would have thought of cooking them down some first. Damn I want a pressure canner. LoL

    I bought one flat of mushrooms at a restaurant supply store. I set about cutting them first w/ a knife, then I tried a mandoline, neither method was going fast enough for me. Then I tried my hard boiled egg slicer. Its the perfect tool!

    I learned from a restaurant I worked in. An egg cutter works great for cutting mushrooms.

    Awesome video I think the difference between dirt and earth is the people that call earth are the ones that smoke mushrooms instead of canning them .Lol

    I saw a video from Bon Apetite the guys name is Brad and he is fun to watch. Anyway he did a experiment on if rinsing mushroom verses not. Old wives tale about the mushrooms soaking up the water so do what is best for you

    JM Mushroom's are available nationwide. Their farm is about 30 minutes from me!!! I know, right! lol, and I don't even particularly like them, but on occasion I do. Therefore, I'm going to can a few....don't hate me! Now listen, this is important: blanching is NOT just so they will soften up and reduce the empty space. It is to stop the natural enzymes from continuing to work their magic on the product, mushroom or otherwise. Enzymes do not know when to stop working. That's why we get spoilage in fresh food. Even in the freezer and in jars, if you don't blanche for the recommended time, the end product will be affected....perhaps only a little bit but maybe quite a bit. Just do it. You want the best product going in and you want that product to be the best it can be when you go to use it. Thanks for sharing all you do. I'm canning meats now because of your videos!

    Mushroom soup, roasted potatoes and mushrooms, mac/cheese and mushrooms. Just had the roasted potatoes and mushrooms tossed in oil with salt, pepper and garlic powder. Yum. :)

    You inspired me to give this a go! This afternoon I processed 10 lbs and got 12 pints of shrooms along with 4 pints of broth. And I have 1 quart and 1 pint&half of broth yet to go! That’s going to be a great soup base! Thank you for sharing your talents with us!

    My nephew gave me a Lion’s Mane Mushroom growing kit for Christmas. He set it up in my kitchen, and I’ve been tending to it everyday. The mushroom’s that have grown since Christmas are almost ready for harvest. I’m going to pressure can what I harvest, which will probably be about 4 jelly jars, but hey, it’s something we’ve done together and the kit will continue to grow more mushrooms! Thank you for your video as my canning books tell how to’s..., but that information is not like seeing the process of canning. You’ve inspired me.

    Have you ever watched Townsend, they deal with recipes back in the 17 and 1800s they have a fabulous recipe to make mushroom ketchup , It is dark, No tomatoes required my family loves it

    That's cute you call it dirt on your mushrooms. In my neck of the woods I get the mushroom manure for my garden. After the mushrooms are grown in the caves in the manure they are cleaned out and garden supply houses buy it and I can buy it by the cubic yard. It has a wonderful semi-sweet smell to it. Along with mushroom manure and chicken poop my plants jump out of the ground they are so happy! Lol

After watching this a couple of times yesterday and pondering it, I found myself walking into Aldi's this afternoon and purchasing a flat of 12 boxes (8 oz) of the best looking 'shrooms I've seen in a while. They will shortly be riding the 'canning train' to beautiful flavorful shelf stable food for me and my loved ones. Love your videos! God Bless you!

Since I don't get enough sunlight in my patio and can't grow squat here, I'm thinking about ordering a mushroom box. They don't need sunlight. :)

    Just canning chantrels that we just went out this morning to pick around our house. I'm making it into mushroom soup base so that I can make cream of mushroom soup. I'm allergic to gluten and dairy. So I have to make my cream of soups from scratch. So it will be nice to just open a jar add gf flour or cornstarch and almond milk and have it for casseroles or whatever. I added a jar of beef broth and salt and pepper and onion powder and asafoetida powder. I use that in place of garlic as I'm allergic to garlic too. And the chantrels are just starting to pop up. So will be making more as I get them. Yum!

      My husband and I r allergic to milk too! We r also allergic to onions! Thankfully, my parents and his parents home cooked everything! So I had good teachers 45 yrs ago when we got married and I learned to cook! I understand your battle!

      @@vikithomasson7772 my hubby and I have been married 42 years. He's not allergic to anything. I'm the one allergic to a lot of things. So he eats what I can eat. Since I cook all our meals. But I have learned a lot since I have been off gluten for 8 years and dairy for 6 years. So I have learned to switch my old recipes to gf df.

The God Lord just knew what He was doing putting us together! Lol! Have u ever tried canning with almond milk? I can’t find anything saying yes or no?

    I was filled with envy when I saw that giant pot filled with mushrooms as you washed them. And yes, mushrooms should be washed. I adore mushrooms! They’re fantastic on a mushroom & onion pizza or a mushroom and onion omelette. Black olives are good on either of those things too. I definitely use the entire mushroom too. What kind of crazy person would throw away any part of a mushroom? Haha! Pure joy to watch you process and can these. 😁😁😁

    Thank you for doing this! 💜 I found you on a yt search because I just dehydrated a bunch of mushrooms and found I'm not crazy about their texture in a soup. 😐 Canning them would take less time too!
    And, gurl! I not only wash them, I use a net scrubby (lightly) on them too! 😁 No one likes gritty shrooms.

    Where I am in Canada, a lot of mushroom farms let you buy from them directly. They have a set up where they have a small outlet to buy or you can order them. Worth calling the mushroom farms to ask.

    I have extra mushrooms so I dehydrated some. I made them into power as you did on your video of canning meatballs. I I also added the rest of my onions, peppers, celery, oregano, dried tomato peels and chocolate mint from my herb garden. Wow, it tastes great. I wanted to make sure I like the meatballs before I invested time and money.
    Now I will be on the lookout for mushrooms to can. I'm on the middle of Michigan and gearing up for planting seedlings. Thanks so much for your video's. I'm new to your channel.

    I never met a mushroom I didn't love! I use them in everthing, if I think we are eating too much meat, I use mushrooms as a replacement. For example, a traditional bolognese, I get rid of the meat and add mushrooms instead, I have fooled a few people. Just a PSA, washing your mushrooms is fine as long as you wash and use, don't wash them and wait thats when you will have a issue.

    Thanks for the video. I have never canned mushrooms. I have dehydrated, and even powdered, but not canned.

    Fresh mushrooms should never be washed like other veg and fruit until you are ready to use them. And then it is recommended that you gently wash them. They will soak up any liquids but not from a light washing before you use them. I too had a great mushroom guy while living in Oregon and boy do I miss him lol.

    I have a small kitchen as well.exyremely small with not much counter space but a huge table in the dining area an alot of good food gets cranked out of there.people comment they couldn't deal with that small of a work area.i raised 4 kids cooking an canning out of here.ive made it works with a few temporary modufications.its doable if your focused an get r done!
    I love love mushrooms.only one in the house but I would like to find a sale an can me some.no bulk sellers in our area.

    I'm with you, wash those mushrooms. Some people wipe them clean - one at a time. I ain't got that kinda time. Like you, I try to can in bulk.
    Just one ten pound case today but that was $24 at the market. Wow has everything gone up. I feel it's just going to get worse so I get them while I can.

    Angel Hair pasta with sauteed mushrooms & chicken and a homemade alfredo sauce, oh yum.!! My mouth is watering already. I have always been at a crossroads regarding canned mushrooms because they tend to taste rubbery to me. That is until I tried a home-canned mushroom and my goodness what a huge difference. I still prefer fresh mushrooms to saute with onions for my steak or on my pizza though. Thank you so much for this video. Blessings to you always

    I canned mushrooms last year after I saw you. I did half pint jars. This year its pints, I live near a large produce store and they have them all the time.

    Mushroom stock is amazing. Love it as a base for veggie soup with mushrooms... Sauteed mushrooms on burger with red onions, tomatoes, avocado and lettuce. ..... vegetarian beef stew (substitute beef with mushrooms)

    Thank you! I can't believe the difference in taste between using the blanching broth and a "broth" recipe ! 21 pints of shrooms, 9 qts broth from 2 cases. 1 batch siphoned.

    Nice! Going to do beef cubes today! I dried my last batch of mushrooms but I’ll can the next ones. The store cans are nuts.

    I strain the extra stock through a cheese cloth and can that as well to add to soups and stews
