RECIPE
Wash and soak ½ cup of Bengal gram for 6-8 hours. Transfer this to a pressure cooker and add ¼ tbsp turmeric powder, ¼ tbsp salt and cook it for 4-5 whistles.
Elephant yam - 1 cup
Raw banana/ green banana - 1 cup
Ash gourd -1 cup
Add these to a curry pot, along with
Turmeric powder - ½ tbsp
Chilli powder - 1 tbsp
Salt - ½ tbsp
Pepper powder - 1 tbsp
Curry leaves - 1 sprig
Water - 1½ cup
Close the lid and cook these well.
To another pan, add
Cumin seeds - ¼ tbsp
Urad dal - 2 tbsp
Roast them until they turn light brown and add 2½ cups of coconut and 4-5 curry leaves. Roast them until the color turns brown. Transfer 1/3rd portion from this to a jar and form a paste. Keep the rest as it is.
Now when the vegetables in the curry pot are cooked, add cooked Chana/Bengal gram to it. Mix them well and add 2-3 tbsp of jaggery. Now add the coconut paste to this and mix well. Cook it for a few minutes. Now add the fried coconut mixture to this, mix well and turn off the flame.
To another pan, add some coconut oil, followed by mustard seeds. When it has spluttered, add dried red chillies, shallots and curry leaves. Transfer this to our curry and close the lid for a few minutes. Later, mix well and that’s it!! The super tasty Koottucurry is ready!!
