For those wondering: the only difference is that your oven uses much more energy.
I find that the oven method imparts a slightly toasty flavour to the onion that someone may or may not be looking for, but that's just me. Could be some kind of association effect

Place your powdered goods within and add oxygen and moisture absorbing sachets, then heat seal.

The oven kinda produces darker onions, but in reality, the color difference is in the grinding vs blending. Grinding things turns in finer power, and powders are alway lighter in color.
@SafeSpaceKitchenette, the differences in characterization between the two powders you showcase are likely the result of the increased temperature in your oven. Dehydrators are designed to efficiently dry at 140 degrees Fahrenheit. Oven temperatures also can vary in temperature significantly depending on design and whether there are hotspots or other defects.

150 to 175 depending on your oven the lowest temp for my oven is 175 I hope this helps

What should be the temperature of oven?
the lowest possible
150° - 175° seems standard.
In effect, you are very gently cooking the item, if you think about it, so the lower the temperature the less the item is cooked, however, it takes longer to dry.
Slower drying also means less of the nutrients evaporate out.

Dehydrators come with fairly accurate drying times, but it's also dependent upon how much moisture the item being dried contains.
I usually place anything in kitchen towels for 20 mins first, which assists the drying enormously.

Cant i just throw the onions in a food chopper/processor.

150-175 is too high ! i cook meat at that temp and its cooked in 2 hours !
its 50 the most for drying vegetables or fruit and make sure the oven door is slightly open so the steam can escape .
My friend worked with a chef. The guy put everything in. The crowns and the secomd skin. In fact there were loads of cut-offs besides whole onions. I've never had such a tasty powder. It makes store-bought powder pitiful.
