Thanks for the tips! I don't know why but people drop the garlic cloves in whole. I did an experiment decades ago where I canned a jar of dill pickles with whole cloves and a jar with crushed garlic cloves. The same brine/vinegar solution and spices were used in both. Six months later I opened them and taste tested them. There was just a hint of garlic in the uncrushed clove jar where the crushed garlic dill pickles had a nice rich garlic flavoring to them. I've crushed my garlic ever since in every canning recipe using garlic. The difference is amazing! CRUSH YOUR GARLIC CLOVES for max garlic flavoring!
The blossom end is what makes a soft pickle. That is the only end you should cut off. I've been making pickles for 40+ years. And your recipe is tried, and true. If you cut off the blossom end when you eat the cucumbers fresh, they will not be bitter. Just an fyi.
My cukes did not grow well either so I had to hit the farmers market. You rocked that pokey joe and your recipe looks delicious and the jars are vibrant in color. I swiped a tongue depressor from my doctors office and have a measurement for pints and quarts. Had to show the hubby I am NOT the only one who measures their cukes! LOVE your videos.
I started cucumbers 3 times this year. They just kept getting wiped out by the rains, or something. Homemade Pickles brand of pickling cucumbers grew well and I have canned about every variety of pickles there are, plus lots more coming.
Jar it up January brought me to your channel and me to marathon watch. Its early - who craves Tuscan Zappa, Mongolian Beef and gorgeous dill pickles at this hour?? Me and I'm dying here, starving, in fact!! Everything looks delish, thanks so much for sharing!!
I haven't canned pickles in years. I stick strictly to refrigerator pickles now, but these look delicious. I did 16 pints of pickled peppers and onions today. So great to have all of these pickles on hand for salads and sandwiches, or just to munch on.
I was so happy to see this video. I made pickles this year and had to toss them all. After processing, they were unbelievably limp and not edible. I love how precise and methodical your videos are. I learn something every single time! Thanks!
Susan Robinson I completely understand mushy pickles. That only happened to me one time then I went straight to grandma and had her teach me. This is not an approved method that is my disclaimer 😁grandma never processed her pickle in a water bath canner. I’ve been doing it the same way for 35 years and everyone is still alive lol. Search on “Our Half Acre Homestead” Mrs Volfie shows exactly how I make pickles. The only difference is I don’t turn my jars upside down. I guess grandma taught me to be a rebel canner. Think about a boiled cucumber.... yucky mushy. Paul’s jars are beautiful! 🦋💜
Hey,Paul came over see your pickle recipe.Heather from the Kneady Homesteader sent me. I was happy to find a recipe with no sugar! Thanks so much for the great instructions. I'm excited to see more from you!
Hi Paul, for 3 years I have canned pickles and every time they are soggy, even with Mrs. Wages. Please update us with your results and I will try ours. The only ones that are crispy are refrigerator pickles, I don't know what I'm doing wrong. Thanks
Use "Pickle Crisp" in each jar with a Bay leaf, grape leaf or tea leaves and you pickles will always be super crisp. Don't pre-boil the cucumbers. Cold pack them like Paul does and add hot brine to jars with ingredients I suggested. Good Luck!
Thank you for sharing your time and knowledge. This is my first time canning and I have a question. Should the ring of the lid be removed? I noticed your rings are gone from the finished product.
Hi Vickie.. I do store my jars without rings.. 24hrs after they come out of the canner I take the rings off, check the seal, and wash the jars thoroughly in hot soapy water to remove any residue from the jars before storing them. Leaving the rings on can create a false seal and potential spoilage. Hope this helps!😊👍
These are beautiful! I have always canned bread and butter pickles with my mom, but am trying to branch out into dill spears and chips! Fantastic tutorial.
Paul the Pickles look Beautiful.... Thank you for the Shout Out. At this time I no longer sell Tupperware. I know those 59 cup Thatsa Bowls are amazing.. They go on sale just a few times a year. So if you are interested in those beautiful bowls. Colors change per sale. When you see that they are on sale grab them while you can. Usually around the holidays. Mother's Day, 4 July, Thanksgiving & sometimes during the fall they will go on sale too.. Big hugs my friend..Have a great week.. :")
I was watching the Kneady Homesteader and she said you made the best pickles she ever tasted :) Since I will be trying canning for the first time tomorrow, I thought water bath dill pickles might be a good place to start. I can't wait to taste them! My husband and I also love garlic pickles.
If you haven't tried self pollinating your cucumbers i highly reccomend it. Sometimes if there's not enough bees or pollinated species around, the plants won't produce. This usually only applies to cucumbers because they are one of those plants that can't self pollinate. Most other veggies are ok
Thanks for making this video for everyone. I could only find 1 to 1 ratio of vinegar to water for canning pickles and peppers, so I am happy to see 2 to 1. Would you mind sharing where you got the information on how to make safe brine? Thanks
Heather from Kneady Homesteader made a version of this recipe & sent us over to watch your video. I love the idea of using dried chili peppers! Going to check out some more of your videos. Thank you!
That's some good-lookin jars of pickles! My cukes tanked as well...they all turned into balls. WTF am I going to do with those? I guess hamburger sliced pickles are on my agenda now!
Shelly Rees Hello there, a few of my cucumbers grew round as well. I just sliced them into rounds and nobody knows the difference. I’m sneaky. And the Titanic sized cucumbers I put into the food processor and make my relishes out of those ones. Sneaky sneaky I am🦋💜
I didn't see anyone mention it, but I may not have gone far enough down. Those are poblano peppers used mainly in Mexican dishes. They can be mild, every once in a while I'll find a hot one. They're the peppers used most often for Chili Rellenos. They look amazing. I processed 3 poblanos Tuesday. I had bought like 8 to make salsa and salsa verde and didn't use them all. so we said pickle them, we can toss them in some taco meat later.
This is my first year making pickles so far I have done Asian Ginger and bread and butter pickles. Hoping to get my dill pickles done next week. Your jars look beautiful, thanks for sharing : )
Thanks Paul I am new at pickles and want to know how long before are the best and do you have a secret for crisper pickles? I really enjoyed your video and am going to go back and check them all out...
Thanks for subbing! I actually don't know much more about the bowl other than it is the largest (52 cup I think) in the "Thatsa Bowl" series and they only come out about twice a year. 👍
I wonder why home cooks have to take the ends of the cucumbers but when you buy them in the store they are crunchy and the ends are still on them. Anyway this looks delicious and I have got to try it. I wish I could eat one right now.
Those look so good!! I gave up on pickles years ago. Could never get a "crunchy" pickle!! I can't remember if I cut the ends off, maybe that was my problem. I only do a few refrigerator pickles now. Wish there was UA-cam back when I was doing this!! LOL
Hi Paul, I came over from Heather’s channel. Can I ask a couple of questions please? Do you soak the cucumbers overnight in ice water? I dehydrated my jalapeños, would they work? This is how my grandmother made pickles and I so want to make them like she did! Thanks
Hi Allie.. I'm so sorry to not have responded sooner.. for some reason your message went into the spam folder.😢 I do not soak my cucumbers and I think the dehydrated jalapenos would work fine. Welcome to the channel and I hope you are doing well! 😊👍
Came over from Heather's channel! I'm not sure how I haven't watched you before but this was a great video and I hit that subscribe button! FWIW, my cucumbers did HORRIBLY this year too. I got a whopping 2 whole cucumbers 🥒 😂😂😂 I mean they made a good salad with our home grown lettuce, cherry tomatoes, and onion but was hoping for just a bit more. Anyway, my before work canning session today (I get up early with the puppy and working 100% from home) is about 5 pounds of leftover BBQ pulled chicken. My husband and I can't eat it all before it'll go bad so might as well can it up, right?! Happy canning!!
Paul, I made these today! I snitched a sample and they are soooo good! I do have a question...do you need to wait a while before using these or are they ok right away?
Been looking for a good pickle recipe. Heather said these were the best pickles she's ever ate so that's what I'm looking for. I love pickles never had much luck with canning pickles they just didn't taste good
I like sweet pickles myself, but these were just so pretty to look at! What a wonderful gift that your friend gave you! I bottled up 10 lbs of pickled beets (11 pints) and did 9 pints of bread and butter pickles yesterday after work. I put a little calcium chloride in the batch of bread and butter pickles to keep them crisp. Have you tried Pickle Crisp?
Thanks for the tips!
I don't know why but people drop the garlic cloves in whole.

Thank you for the great instructions! Making these for sure.
Nice job 😊
So helpful. I am new to pickling. Thank you. I believe I learned a ton. You are a capable teacher.
I made these last year. They are fabulous. They stay crisp.
The blossom end is what makes a soft pickle. That is the only end you should cut off. I've been making pickles for 40+ years. And your recipe is tried, and true. If you cut off the blossom end when you eat the cucumbers fresh, they will not be bitter. Just an fyi.
Thanks for sharing the great tips Kathy!😊👍
How do you keep them from being mushy?
You can add pickle crisp, grape leaves, or alum to prevent that.
I can’t find fresh dill can I use dried dill
You sure can. I would guess about a tablespoon for a pint.👍
Paul's Rule of Thumb thank you
Do you use alum or grape leaves to help with crispness?
I have tried alum but not grape leaves.. the alum does help with crispness.😊👍
They turned out beautiful
Thank you Sherry!👍
SO what exactly is the reason for not using sugar? Is it purely a taste thing?
Exactly.. just personal preference. :)
Do you store them without the bands on them? Can you store with them on?
You should never store jars with the bands on.. it can create a false seal if one of the seals fail.😊👍
What do you do if free canning the pickle slices head room dropped to one inch? Are they ok to still eat?
As long as they are covered by liquid they will hold up.. if not they may discolor over time.
Kneads sent me. Howdy!
Welcome aboard! :)
These are hands down THE MOST BEAUTIFUL jars of pickles that I have EVER seen! 😍😍😍😍😍😍😍😍😍😍
You are so sweet!!🥰❤❤😊👍
I like the wide mouth jars for this
Me too.. but I'm not fussy! 😉😊👍

Think about a boiled cucumber.... yucky mushy. Paul’s jars are beautiful! 🦋💜
How long do. They soak until you can eat them, beginning canner!
You can eat them right away.. but the longer they sit the better they get. I usually wait at least a couple of weeks. 👍
Pickle heaven!!
Thanks Jeanette!❤👍
Thanks for the video. Will be trying this soon. How is the crispness of the pickles over time?
The one thing I will change based on my friend Heather.. is I will add pickle crisp to my next batch for extra crispness. 😉👍
Yay Trevor for sharing! The different size and shape pickles will look beautiful in your pantry. Thanks for sharing.
Trevor rocks!!😊👍
Came over from Kneady Homestead. Thanks for sharing, you now how a new subscriber 👍😁💗

Wow those are beautiful poblano peppers. They make wonderful chile rellenos.

It really is hard to get a truly crispy pickle when home canning.. but cutting the ends helps!😊👍

Thank you Becca!😊👍
Paul's Rule of Thumb You are so very welcome!
Good looking pickles! Cucumbers were the only thing that produced very much in my NC garden this year, so I made lots of pickles! Thanks for sharing!!
Awesome.. glad someone got cucumbers this year!😊❤👍
I can’t wait to try these. It’s great to see a no sugar recipe. Thanks, Paul! Watching again, thanks to a reminder from Kneady Homesteader.
My pleasure!
Thanks for sharing your recipe. I had the same problem with cukes this year. Tons of blossoms, not a single cuke yet.
Seems like a lot of people had the same issue!🤔👍😊
These are beautiful! I have always canned bread and butter pickles with my mom, but am trying to branch out into dill spears and chips! Fantastic tutorial.
Thank you for your kind words!😊👍
Kneady said these pickles are amazing! I think she is probably right! They look delicious!!

Look beautiful. Remember, if you would ever need to know, that you can put a clean grape leaf in the jar to help it stay crispy.
I love that advice.. thank you so much!🥰👍😊
You can also use a Bay leaf or even Tea leaves to impart tannins for crispness
Thanks for making this video for everyone. I could only find 1 to 1 ratio of vinegar to water for canning pickles and peppers, so I am happy to see 2 to 1. Would you mind sharing where you got the information on how to make safe brine? Thanks
I honestly couldn't tell you.. it was so long ago.. I've been making these for 25 years!😊👍
Same here came over from Heather, great video and tips. Have subscribe

Heather from Kneady Homesteader made a version of this recipe & sent us over to watch your video. I love the idea of using dried chili peppers! Going to check out some more of your videos. Thank you!
Welcome!! I hope you like what you find on the channel!👍
How much dill seed do you use if no fresh dill?
It's up to your taste.. but I would probably use a Tbsp for a quart. :)
Heather from Kneady said you make the best pickles!
She's very kind. 🥰👍
Came over from The Kneady Homestead! She gave you a shoutout and I came to learn about your awesome pickles!
Thanks for coming.. hope you enjoy!👍
That's some good-lookin jars of pickles! My cukes tanked as well...they all turned into balls. WTF am I going to do with those? I guess hamburger sliced pickles are on my agenda now!
Several people including myself have gotten cucumber balls.. weird!🤔😊👍

Asian GINGER sounds DELICIOUS!!😊👍
Your baking videos look amazing...have you done a video of the Asian ginger pickles? I could have missed it.
Thanks Paul I am new at pickles and want to know how long before are the best and do you have a secret for crisper pickles? I really enjoyed your video and am going to go back and check them all out...
A couple of weeks is best.. just cutting the ends works for me. 😊👍
@@PaulsRuleofThumb Thank you
Hey Paul....I want to purchase the 59 cup bowl and can't find it. Is this seasonal? Thanks for sharing your canning.
Check with Angie at Angie's Pantry.. I think they are seasonal. 😊👍
You do a great job, like step by step info. Those jars are beautiful 😁
Thank you.. I try to keep things simple and accessible for everyone!😊👍
Came across this video watching kneady homestead! Your pickles look amazing! Question if you use dry dill how much would you use?
It's all to taste.. but I would say a tablespoon per pint.👍
Thank you so much!
Enjoyed your video. Im a new subscriber now!!
Can you say more or add a link for the bug Tupperware bowl plz? Thanks!!
Btw: Kneady referred you ❤
Thanks for subbing!

Very informative. Thank you!
I have been looking for a vlasic copycat recipe. I really prefer the crispy pickles.
Same here.. crunchy all the way!😊👍
Sound like cucumber beetles wrecked the crop.
Definitely could be the cause. 👍

I bottled up 10 lbs of pickled beets (11 pints) and did 9 pints of bread and butter pickles yesterday after work. I put a little calcium chloride in the batch of bread and butter pickles to keep them crisp. Have you tried Pickle Crisp?
I have tried it.. just prefer au natural!😉😊👍
I spy with my little eye: le creuset and golden girls!
