This makes me miss Japan and my family there. Sakura flavour is one of my favourites and sitting under the blooming trees feels like magic! This tart really captures that, so beautiful.

I make Sakura jelly every spring here in the US and all my friends love it. They think it’s a weird idea, but love the taste and color. I use plum vinegar as the acid, so it’s a little salty, too. Beautiful idea and execution!
Sensei, a word of advice when working with jelly and ganache: you must make a thin layer of the jelly as cold as you can and let that set first. After that you should fill up the rest of the tart! I saw this advice in the chanel of how to cook that, I hope it helps for next time!
I’ve tried this tip before but I don’t quite do it myself because there’s a high chance of messing up the clarity of the jelly especially the how delicate the blossoms flowers are but you def can still try this by reportioning the measurements for two layers! Just a warning since I’ve messed up on a similar tart ;)
I made this, its a light sweetness, well balanced, super floral and botanical. I also was able to get the jello to stick partially by sprinking clubs of powdered sugar on top of the wet hot chocolate
I suggest keeping the tart cream as white so that when you put the agar mix the sakuras are seen. This will make the appearance much better if your after the appearance but this is great too!
