We try to “eat the rainbow” of fruits and veggies everyday. These preps will help. I love your casual and hands-on parenting style. Your daughter is blessed to have you as her mommy.
Sometimes I chop salad ingredients and can't eat all the salad. Next time I cook rice or potatoes, I use the leftover salad fixin's to go into the rice or potatoes. lol. Im laughing because when I read it, it sounds funny, but on a sweet potato, or mixed in some rice... not so bad. Adding some lime and hot sauce helps too. It changes the overall flavor of the ingredients, so gives a whole new meal deal. Thanks for all the great ideas. It all helps me stay on track. Love the lettuce cups.
That adorable edamame fiend would probably love hummus made using edamame. And it freezes well so you can make it up, portion it out and freeze it. I do this because I'm the only plant-powered person in my household and it helps to freeze what I can freeze so I'm not throwing out food that I couldn't eat before it went to the rotten side 🤷♀️
You're exactly right about keeping it as easy as possible. I didn't have any success maintaining a healthy weight until I simplified everything! I was trying to be an "overachiever" and do more than was necessary, and it was just holding me back. For some reason, I felt guilty buying pre-prepared ingredients. I think it had to do with the way I was raised and the mentality my mother had about having to make/prepare everything from scratch. Once I let that go and made things easy for myself, I found that staying consistent was no longer a constant battle. Thanks so much for all that you do :) Your channel has helped me immensely.

When I make chili, Indian food or some kind of rice and beans mix like you did I portion it all out into a large silicone muffin pan and freeze them up as single serving meals to be added to raw fresh ingredients and potatoes to make bowls quickly. It only takes about 3 hours in the freezer per muffin pan. I have two 6 portion muffin pans and I batch make these types of meals twice a week and label them accordingly. I store them in the freezer in ziplock bags. Whatever doesn’t fit in the muffin pan goes directly into the fridge to be consumed first. After doing this for awhile you’ll begin to accumulate 2 or 3 frozen muffin meals of different dishes and it’s really nice to always have that inventory waiting for quick hot meals in a hurry.

I actually like to bake a bunch of potatoes and sweet potatoes at once. Just a tiny bit of oil rubbed into the skin keeps them from drying and the taste amazing. I like to finely chop broccoli for a topper, and put that, edamame and peanut butter, and a dollop of vanilla soy yogurt on the warmed sweet potatoes for breakfast. Tastes amazing and warms you on colder days. The potatoes are great topped with hummus too. Then sides vary with my mood. Also, big pot of soup works for dinner, then in the fridge for me to tap into as a side with lunch through the week.
I just love you and your channel :) amen on the easy! Live on reheated pre steamed potatoes and pre cooked then frozen rice! It’s a game changer to week night routine to keep me on track!

I prep with one type of grain, one type of potatoes, cheese sauce (of course), one type of pasta, tofu or tempeh weekly. If I have the time to pre-cut veggies and fruit, then I’ll do that too. I change it up weekly.
I’ve been making Mexican rice in big batches too! Great for filling in any Mexican dish, especially love on sopes. Great idea for easy potato prep, im going to do that tonight!

My favorite way to meal prep is just to make my first two meals of the week be something with rice and something with potatoes and then i just make way too much of those and put the rest in the fridge, lol. I don't want to do a "meal prep session". less dishes that way too. I often do the same with whole wheat pasta.
I cook potatoes, brown rice and dry beans quite often, I like to buy coleslaw mix as you said and also large cheap bags of stir fry veg. I dont find a need to prep frozen edamame, just defrost in boiling water or add in to stir fry. I just wish I could buy oil free hummus in the UK as that would be perfect. I do make my own but need to double up the recipe I think!
I love these videos! Morgan is SUCH a star. I also prep potatoes but I steam/ bake them in the crockpot. Throw them all in and add a cup of water or don't it doesn't matter, walk away. They are done, unattended, in a few hours. Could you help with procedures for sticking to the plan during holidays/vacation? I do really well until a holiday, then it all seems to hit the fan.

I agree with your gorgeous daughter! i LOVE LOVE LOVE edamame! i buy shiploads of froz bags of SHELLED edamame plus froz peas & corn, and i throw them in EVERYTHING! (Have also been known to accidentally put the rice or quinoa on last, but couldnt wait 4 it, so just ate a bowl of edamame peas & corn for tea!
Can’t eat soy and all beans Cept garbanzos and split peas! Making wfpb weight loss challenging or tbh-am having salmon & tuna…. Sticking to the rest of your oh do helpful methods! Thank you Chelsea!

I try to prep one item a night instead of all at once. I can't find oil free humus by me so I prep that one night, I'll make pasta for dinner and make an extra box for another night or lunch and always a huge pot of soup so we have enough for another time
What does it mean to have your eyebrows laminated? In the US we have eyebrow tattooing but I’ll have to look into this laminating business, you look great!
When in a whole bean the edamame doesn’t seem to go in my stomach too well despite being able to eat tofu in things. But I’m sure I must be able to do some sort of substitute. 🤷🏼♀️🤔👍😁🌱
Oh do your edamame start fading to grey once cold? I tried prepping some for the kids lunch box but they didn’t eat them once they’d faded, does that mean I cooked them too long?
Steaming is easier than boiling to me, they get less wet and dry quicker. You could do either. I wouldn’t cook the rice often cause I’m lazy and don’t do this much prep. 😁

Everyone is concerned these days about prices. Isn't the frozen rice and other more pre-prepared items a lot more expensive? Buying items like rice in bulk will be much more affordable and is easy.
@@paulacopier9455 I quickly googled - it's been parboiled - so partially cooked. Some said to cook it and some said it wasn't necessary - so I guess it's up to our discretion.

We have an air fryer so it's great to just cut up then freeze some potatoes that can be cooked in the air fryer whenever.

For the rice dish: Instead of using tinned tomatoes, could you sub a jar of salsa? Then you wouldn't have to spend time cutting the onions and garlic.

Two questions, why steam potatoes instead of boiling. Why wouldn’t you make that rice often, any specific reasons?

Don’t need cooking just pour hot water over or just thaw. No cooking needed at all

It depends on the packet, some are parboiled, some fully cooked.
I don't like them crunchy so I bring them to boil then take off the stove.
