    Seems like these instant varieties would be a good introduction to the Kyoto/Niigata style. Since the bowls you showed with a ton of seabura look kind of daunting! I love seeing different styles of ramen, though. It's a more complex world than I thought.

      I agree - even to me to me those seabura bowls are daunting!! The instant ramen with the lighter amount of seabura is a nice ease into the style, for sure.

    From your description, it sounds so tasty. I'm going to have to find the pork backfat in my freezer to make my own.
    I think that my choice of Kyoto vs Niigata style would be dependent upon the weather at the time as to whether I'd prefer the lighter or not so light broth.
    Whilst I tend to favour thicker noodles, I love thinner noodles too.

      Glad the descriptions worked 😀. In Japan it's pretty cheap to order pork back fat and hopefully it's the same over there, if your freezer isn't stocked with it now. I know what you mean - weather, mood..all these factors come into play when deciding what to eat at that moment! 🍜🍜🍜

      @@5AMRamen I like fat noodles so I might go for that one, but they both looked good. I don’t think I could take the one you showed from the restaurant with all that back fat though.

      @@martenlundin I have a hard time with the back fat overflowing ones too! Usually that has to be my last bowls for the day! The fat noodles in the Niigata version were nice 😃

    I don't like to eat meat, especially pork.
    But I enjoy watching Frank SLURP these ramen.
    Makes me hungry.

    👍🏿 mayb I am wrong but the kyoto ramen looked like it had more of that special negi which may have imparted a flavor aspect that you enjoyed as well? Cant wait to see the hokkaido series!!😀

      The Kujo negi definitely elevated that bowl! I had a section where I went on about the negi but it was so drawn out and I ended up editing it out 😂. Hokkaido is next up for ramen - thanks for watching!

      This style is mainly found in Tsubame and Sanjo Cities and "Koushu Hanten" is THE one you have to check out 😊. Another is "Anpukutei" but that's in Nagaoka City, about 45 min by car from Tsubame. In addition, Nagaoka has its own ramen style - ginger shoyu ramen!

      I think the garlic would stand up against the stronger soy sauce flavor in that one. Nice choice!

    Can you give suggestions to those of us who are "great ramen challenged" where we might be able to order premium ramens online.

      From what I've seen, there aren't too options available. ZenPop is a company that comes to mind but I believe their instant ramen shipping is now on hold. I think I'm going to have to start a new venture (this) soon!

      @@5AMRamen Yes! I wish you would. I've watched your ramen videos with Tabi-Eats and I am in awe of all the types and varieties. Also, that you can eat so much ramen and not gain a pound, LOLL! I would love to try original, authentic bowls of tonkotsu, Shoyu, and Miso Ramen. I'm somewhat indifferent toward Shio, however. But just some good basic bowls of the real deal.

      I will be looking into this new instant ramen venture 😊. Yes, the options are endless with ramen! Definitely good to grab some flagship bowls of shoyu, tonkotsu, miso and shio. You never know - maybe a great bowl of shio here could make you a shio convert 😀.
